INGREDIENTS

CRUST
- 2cupsflour
- 1/2cupicing sugar
- 1teaspoonground ginger
- 1cup coldbutter

FILLING
- 3 (250 g)packagescream cheese, softened
- 2/3cupsugar
- 1cupsour cream
- 1teaspoonvanilla
- 4eggs
-
TOPPING
- 1/2cupbrown sugar
- 1/3cuprolled oats
- 1/3cupflour
- 1/4cup coldbutter
- 1/2teaspooncinnamon
- 3apples, peeled,cored and sliced into eighths
DIRECTIONS
- Set oven to 350 degrees.
- For the crust: In a food processor, mix together flour, icing sugar and ginger.
- Using on/off motion, cut in butter until dough starts to come together in clumps.
- Using hands, press mixture evenly into bottom and up sides of a 10-inch springform pan.
- Refrigerate for 1 hour.
- Using a fork, prick bottom all over.
- Bake in oven for about 20 minutes, or until golden brown.
- Let cool on rack.
- For filling: In bowl, beat together cream cheese and sugar until fluffy.
- Beat in sour cream and vanilla.
- Beat in eggs 1 at a time, until well combined.
- Pour into cooled crust.
- Bake in 300 degree oven for 45 minutes, or until center is just slightly wobbly and indented.
- Transfer to rack.
- For topping: Meanwhile, in a small bowl, mix together sugar, rolled oats, flour, 3 tbsp of the butter, and cinnamon until crumbly; set aside.
- In a large skillet, melt remaining butter over medium-high heat; cook apples, turning once, for about 5 minutes or until golden brown, and slightly softened.
- Arrange apples and any pan juices decoratively over cake.
- Sprinkle with rolled oats mixture.
- Bake in 350 degree oven for 10-15 minutes, or until golden brown.
- Transfer cake to rack; let cool to room temperature.
- Refrigerate for at least 6 hours, or overnight.

INGREDIENTS
- 4 (4 ounce)cod fish fillets, about,skinned
- 2tomatoes, sliced
- 1cup freshwhole wheat bread crumbs
- 2tablespoons choppedfresh parsley
- 1teaspoonsunflower oil
- 1/2lemon, zest and juice of,finely grated
- salt and pepper
DIRECTIONS
- Preheat oven to 400.
- Arrange the cod fillets in a wide ovenproof dish.
- Arrange the tomato slices on top.
- Mix the bread crumbs, fresh parsley, oil, lemon zest and juice.
- Season to taste.
- Spoon the crumb mixture evenly over the fish, then bake for 15-20 minutes.
- Serve.

INGREDIENTS
- 3tablespoonsunsalted butter
- 1clovegarlic, crushed
- 1teaspoon finely gratedorange zest
- 2largebeefsteak tomatoes or4firmplum tomatoes
- salt and pepper
DIRECTIONS
- Soften the butter and blend with the crushed garlic, grated orange zest and seasoning.
- Chill for a few minutes.
- Preheat the oven to 400.
- Cut the tomatoes in half crosswise.
- Place the tomatoes in an ovenproof dish and spread the butter equally over each tomato half.
- Bake the tomatoes for 15-25 minutes, depending on the size of the tomato halves, until just tender.
- Serve.

INGREDIENTS
- 6hard-boiled eggs, peeled halved lengthwise
- 1/4cupmayonnaise, low-fat okay
- 1tablespoonprepared mustard
- 1/2teaspoonwhite vinegar
- 1/4teaspoonsalt
- 1tablespoonsugar
- paprika(to garnish)
DIRECTIONS
- Scoop egg yolks into bowl.
- Set aside egg whites.
- Add mayonnaise, mustard, vinegar, salt and pepper to yolks.
- Mash together with fork until smooth.
- Spoon mixture into egg white halves.
- Sprinkle tops with paprika,.

INGREDIENTS
- 2cupselbow macaroni(7 oz)
- 5tablespoonsbutter
- 1/4cupflour
- 2cupsmilk
- 1cupsharp cheddar cheese, grated(4oz)
- salt and pepper
- 8ouncesVelveeta cheese, cubed
- 1/2cup crumbledcrackers, for topping
DIRECTIONS
- Preheat the oven to 350 degrees F and butter a shallow 1 1/2 quart baking dish.
- Cook the macaroni in boiling salted water until just tender.
- Drain it while you prepare the cream sauce.
- In a large saucepan, melt 4 tbs of butter, then whisk in the flour and add the milk.
- Stir the mixture until it thickens, then add the cheddar cheese and stir it in until it melts, Season with salt and pepper.
- Cut the Velveeta into 1/2 inch cubes and stir it into the white sauce, but do not allow it to melt completely.
- Place the drained macaroni in the prepared baking dish, pour the cheese sauce over it, and stir gently to mix.
- Sprinkle the crumbled crackers generously over the top and dot with the remaining butter.
- Bake in the preheated oven for 20 to 25 minutes, until browned and bubbly.
