Cranberry-Orange Muffins Recipe

INGREDIENTS

  1. 1/2cup meltedbutter
  2. 1cupbrown sugar
  3. 2eggs
  4. 2teaspoonsvanilla
  5. 1/4cupwhole milk
  6. 1cuporange juice
  7. 1 1/4cupsflour
  8. 1cupwhole wheat flour
  9. 1tablespoonorange zest
  10. 1tablespoonbaking powder
  11. 1teaspooncinnamon
  12. 1/2teaspoonsalt
  13. 1cup thawed and well drainedfrozen cranberriesor fresh cranberries

DIRECTIONS

  1. Set oven to 400 degrees.
  2. Line muffin cups with paper baking cups.
  3. In a bowl, blend together melted butter and brown sugar using a wooden spoon.
  4. Whisk in eggs, one at a time.
  5. Stir in vanilla, milk and orange juice.
  6. In another bowl, combine the flours, orange peel, baking powder, cinnamon and salt.
  7. Make a well in the dry ingredients, and pour in orange juice/milk mixture.
  8. Blend JUST until combined.
  9. Gently stir in cranberries.
  10. Divide batter between prepared muffin tins.
  11. Bake for 22-25 minutes, or until muffins test done.
  12. Turn out on a cooling rack.
  13. Note: these muffins freeze beautifully.

Chocolate Marshmallow Fudge Recipe

INGREDIENTS

  1. 3cupssugar
  2. 2/3cupevaporated milk
  3. 1/2lbbutter
  4. 12ounceschocolate chips
  5. 1 (7 1/2 ounce)canmarshmallow cream
  6. 1teaspoonvanilla extract
  7. 1cup choppednuts (optional)

DIRECTIONS

  1. Combine sugar, evaporated milk, and butter in medium sauce pan.
  2. cook to soft ball stage Once it reaches the soft ball stage, take off heat and add chocolate morsels, marshmallow cream, vanilla, and nuts (I leave out the nuts) Stir until it is all combined well and melted.
  3. Pour into a aluminum foil lined 9×13″ dish.
  4. Let cool When cooled, cut& don’t forget to peel off the foil.

Christmas Cranberry Cheese Spread Recipe

INGREDIENTS

  1. 1 (8 ounce)packagecream cheese, softened
  2. 1/2cupsour cream
  3. 2tablespoonshoney
  4. 1/4teaspooncinnamon
  5. 1 (16 ounce)canwhole berry cranberry sauce
  6. 1/3cupslivered almonds

DIRECTIONS

  1. In a small mixing bowl, beat the cream cheese, sour cream, honey and cinnamon until smooth.
  2. Spread on a serving dish or plate.
  3. In a bowl, stir cranberry sauce until it reaches spreading consistancy; spread over cream cheese mixture.
  4. Sprinkle with almonds.
  5. Cover and refrigerate for 2-3 hours.
  6. Serve with crackers.

Parmesan Chicken Wings Recipe

INGREDIENTS

  1. 1cup gratedparmesan cheese
  2. 1teaspoonsalt, to taste
  3. 1teaspoondried parsley flakes
  4. 1teaspoonpaprika
  5. 1/4teaspoongarlic powder
  6. 1/4teaspoonblack pepper
  7. 20 frozenchicken wings, & drummettes, unthawed
  8. 1/2cupbutter, melted(1 stick)

DIRECTIONS

  1. Combine first 6 ingredients (cheese through pepper).
  2. Set the melted butter in a bowl and dip the chicken wing pieces first into the butter, then into the cheese mixture to coat.
  3. Set on a foil lined baking sheet with edges.
  4. Bake in a preheated oven at 350 F for about 45 minutes or until fully cooked.
  5. NOTE: To use raw chicken wings- you will need about 2 pounds of whole fresh wings, cut into 3 pieces each and discarding the wing tips.

Grandma Shufelt’s Potato Candy Recipe

INGREDIENTS

  1. 3mediumpotatoes
  2. 1cup shreddedcoconut
  3. 1cup choppednuts(choice)
  4. 1teaspoonvanilla
  5. 3lbspowdered sugar
  6. dipping chocolate(I use dark chocolate)

DIRECTIONS

  1. Cook and mash potatoes.
  2. While still warm, add the powdered sugar.
  3. Mix well.
  4. Add the coconut and nuts (I use peanuts).
  5. Add vanilla.
  6. Mix well.
  7. Form into small shapes or balls and leave for a while to cool and set.
  8. Melt dipping chocolate in a double boiler.
  9. Using a toothpick, roll each ball into the melted chocolate.
  10. Store in a cool place.
