Spaghetti Sauce Recipe

INGREDIENTS

  1. 1 (26 ounce)cancrushed tomatoes
  2. 1 (26 ounce)cantomato puree
  3. 1 (26 ounce)cantomato sauce
  4. 1 (8 ounce)cantomato paste
  5. 1largewhite onion, chopped
  6. 1largegreen pepper, chopped
  7. 1cup of freshsliced mushrooms(I use crimini)
  8. 2garlic cloves, finely minced
  9. 2teaspoonsextra virgin olive oil
  10. 1tablespoonoregano
  11. 1tablespoonparsley
  12. 2teaspoonsgarlic powder
  13. 2teaspoonsonion powder
  14. salt, to taste
  15. pepper, to taste
  16. sugar

DIRECTIONS

  1. In a large stock pot stir together crushed tomato, tomato puree, and tomato sauce.
  2. Set on med-low heat, and cover.
  3. Meanwhile, in sauté pan heat olive oil over medium heat.
  4. When warm, add peppers, onions, and mushrooms.
  5. Sprinkle with a dash of salt and pepper to taste.
  6. Sauté until onions are clear, but not browned.
  7. Add Sautéed vegetables to stock pot, folding them into the sauce with the oregano and parsley.
  8. Cover, and bring to a slow simmer, stirring occasionally from the bottom up.
  9. Once simmering add the tomato paste, fresh garlic, onion powder, and garlic powder, being sure to mix in throughly.
  10. Turn to low heat and simmer, covered at least 1 hour.
  11. Taste, if too acidy add sugar 1/2 tsp at a time, checking every 10 minutes.

Chicken ‘n Rice Gumbo Soup Recipe

INGREDIENTS

  1. 3/4lbchickens, cut into 1 inch pieces.
  2. 1/4lb fully cookedsmoked sausage(I used Little Smokies)
  3. 2stalkscelery & leaves, sliced(1 1/4 cups)
  4. 1largecarrot, chopped(3/4 cup)
  5. 1mediumonion, chopped(1/2 cup)
  6. 1 (14 1/2 ounce)canstewed tomatoes, undrained
  7. 5cupswater
  8. 2tablespoonschicken bouillon granules
  9. 1teaspoondried thyme leaves
  10. 1 (10 ounce)packagefrozen cut okra, thawed
  11. 3cups hotcooked rice
  12. red pepper sauce

DIRECTIONS

  1. Mix chicken, sausage, celery, carrot, onion, tomatoes, water, bouillon granules, and thyme in 4- to 5- qt.
  2. slow cooker.
  3. Cover and cook on Low for 61/2 to 7 hours.
  4. Add thawed okra and cook for 20 minutes longer.
  5. Spoon soup over rice in individual soup bowls.
  6. Serve with red pepper sauce.

CRAB IMPERIAL (Florida Style) Recipe

INGREDIENTS

  1. 1lbbackfin crab meator imitation crabmeat
  2. 1/2cupmilk
  3. 1tablespoonmilk
  4. 3tablespoonsbutter
  5. 1tablespoonflour
  6. 4egg yolks(well beaten)
  7. 1/2teaspoondry mustard
  8. 1/8teaspoonwhite pepper
  9. 1/4teaspooncelery salt
  10. 1/4teaspoonsalt
  11. 1 1/2teaspoonslemon juice
  12. 1/2teaspoonworcestershire sauce
  13. 3tablespoonsmayonnaise
  14. paprika

DIRECTIONS

  1. Heat 1/2 cup of milk to boiling point.
  2. Melt butter& then add flour,& then pour heated milk over flour/butter mixture.
  3. Beat until smooth& creamy.
  4. Allow to cool.
  5. Add the well beaten egg yolks, seasonings, lemon juice, Worcestershire& 1 Tablespoon mayonnaise.
  6. Blend well.
  7. Add crabmeat& mix thoroughly (handling gently).
  8. Fill either shells or small dishes.
  9. Mix remaining 2 Tablespoons of mayonnaise with 1 Tablespoon of milk& brush on top.
  10. Sprinkle lightly with paprika.
  11. Bake in preheated oven at 400 degree for 10 minutes& serve.

Huli Huli Chicken Sauce Recipe

INGREDIENTS

  1. 1/2cupcatsup
  2. 1/2teaspoonsalt
  3. 6tablespoonssugar
  4. 1cup kikkoman soy sauceshoyu
  5. 1pieceginger, crushed
  6. 2tablespoonssherry wine
  7. 1garlic clove, crushed

DIRECTIONS

  1. Marinate one hour, do not marinade overnight (it will be overpowering).
  2. Bake at 350 degrees until done.
  3. Baste every 20 minutes.

Easy Pancakes Recipe

INGREDIENTS

  1. 1 1/8cups siftedflour
  2. 1 1/2tablespoonssugar
  3. 2 1/2tablespoonsbaking powder
  4. 1/2teaspoonsalt
  5. 1 beatenegg
  6. 1cupmilk
  7. 2tablespoonssalad oil

DIRECTIONS

  1. Sift dry ingredients together Combine other ingredients and add to dry ingredients Melt butter in pan (medium heat).
  2. Ladle batter into pan.
  3. Heat on first side until top is a little bubbly; turn and brown other side.
  4. Quantity depends on size of pancakes.
