INGREDIENTS
- 1/2cupbutter
- 3/4cupbrown sugar
- 1egg
- 1 1/2teaspoonsvanilla
- 1/2teaspoonsalt
- 1/2cupwhole wheat flour
- 3/4teaspoonbaking powder
- 1cupwheat germor mixture withflax seeds
- 1 1/2cupsrolled oats
- 3/4cupraisins
- 1/2cup choppednuts
DIRECTIONS
- Preheat oven to 375.
- Cream together the butter and sugar with electric beaters.
- Add the egg, vanilla, and salt and beat well.
- Stir flour, baking powder, wheat germ, and rolled oats together with a fork.
- Add raisins so they get rolled in flour and don’t stick together.
- Blend well with other ingredients; I usually end up using my hands.
- Add a little water if necessary to hold mixture together.
- Place by tablespoonful on greased cookie sheets.
- Flatten them slightly.
- Bake for 10-12 minutes.

INGREDIENTS
- 1lbcarrots, peeled and sliced
- 1piecefresh gingerroot, about the size of the top joint of your thumb
- 1/2teaspoonsalt
- 1/2teaspoonsugar
- 1/2ouncebutter
- 1/2pintwater
DIRECTIONS
- Peel and cut the ginger into matchstick slices.
- Place all the ingredients in a saucepan.
- Bring to the boil over a rapid heat.
- Reduce the heat and simmer for about ten minutes.
- Drain and serve with a small knob of butter on top.

INGREDIENTS
- 2 (5 ounce)canschickens, drained((by the tuna in the grocery store))
- 2 (8 ounce)packagescream cheese, softened
- 1cupranch dressing
- 3/4cupred hot sauce
- shreddedcheddar cheese, you decide how much
- Frito corn chips, scoops
DIRECTIONS
- Beat cream cheese, ranch dressing, and red hot sauce.
- Fold in shredded chicken.
- Spread mixture into pie plate sprayed with Pam.
- Bake at 350 degrees for 15 minutes.
- Add cheddar to top and bake an additional 10-15 minutes.
- Serve hot with Frito scoops.

INGREDIENTS
- 1lb shelledprawns(defrosted if frozen)
- 50mlolive oil
- 2tablespoonslemon juice
- 2clovesgarlic, crushed
- 1teaspoon finely choppedthyme
- 4-5mediumplum tomatoes, seeded and finely chopped
- 200gfeta cheese, crumbled
- 1/2teaspoonblack pepper
DIRECTIONS
- Combine olive oil, garlic, lemon juice and thyme as a marinade and pour over the prawns in a shallow dish.
- Cover and refrigerate for ½ an hour or so.
- Pre-heat the oven to maximum!
- Mix the remaining ingredients Divide the prawns and marinade into 4 or 5 individual, shallow, fireproof dishes.
- Sprinkle over the remaining ingredients Bake in the oven until sizzling.
- Serve immediately with plenty of crusty French bread to mop up the juices.

INGREDIENTS
- 3boneless skinless chicken breasts
- 8mediumtomatoes, peeled,chopped and seeded
- 1leek, white part and a little green,chopped
- 4clovesgarlic, minced
- 2green onions, cut into 1 inch pieces white part and a little green
- 2tablespoonsfresh parsley, chopped
- 1 1/2teaspoonsdried tarragon
- 2tablespoonssoy sauce
- 1cupchicken broth
- 1cupwhite wine
- salt and black pepper
DIRECTIONS
- Place washed chicken in a baking dish.
- In a large bowl, combine the rest of the ingredients.
- Pour over the chicken, cover tightly and refrigerate overnight (or at least 2 hours).
- Preheat oven to 350 degrees F.
- Pour off marinade into a skillet and cook it down to about half of its volume.
- Pour reduced sauce over chicken and bake, covered for about 30 minutes; uncover and bake another 15 minutes.
