INGREDIENTS
- 1tablespoonbutteror margarine
- 1cup choppedonions
- 1cupchopped tomatoes
- 1 (4 1/2 ounce)can choppedgreen chilies, drained
- 1 (4 ounce)cansliced ripe olives, drained
- 2cups shreddedcolby-monterey jack cheese
- 1/2teaspoonground cumin
- 1/4teaspoonsalt
- 1/4teaspoonpepper
- 1/2cupBisquick
- 1cupmilk
- 2eggs
DIRECTIONS
- Spray a 9-inch pie plate with non-stick cooking spray; set aside.
- In a large skillet, melt butter over medium heat.
- Add onion and cook, stirring occasionally, until tender; remove skillet from heat.
- Stir in tomato, chiles, olives, 1 cup cheese, cumin, and salt and pepper.
- Spread mixture evenly into pie plate.
- In a bowl, add the Bisquick, milk, and eggs; stir until well blended.
- Pour batter over vegetable mixture.
- Bake at 400 degrees, uncovered, for 30 minutes.
- Sprinkle with remainder of cheese and bake 3-5 more minutes or until knife comes out clean.
- Let stand 10 minutes before serving.

INGREDIENTS
- 1tablespoonoil
- 1largeonion, chopped
- 3garlic cloves, minced
- 2teaspoonsground cumin
- 1 (15 ounce)canblack beans, drained and rinsed
- 2canned chipotle chiles, chopped
- 1teaspoonadobo sauce, from the canned chiles
- 1/4-1/2teaspoonsalt
- 4largeburrito-size flour tortillas, warmed
- 1/3cupsour cream
- 2cupscooked rice
- 1/2cupsalsa
- 1/4cupcilantro leaves
DIRECTIONS
- Add oil to a skillet, heat over medium heat.
- Add onion and cook, while stirring occasionally, about 5 minutes or until translucent.
- Add in the garlic and cumin, stir and cook about 1 minute.
- Add in the black beans, chipotles, adobo sauce, and salt; stir to combine.
- Simmer about 5 minutes or until heated through (mixture appears dry).
- Spread a warmed tortilla with 1 1/2 tablespoon sour cream.
- Place 1/2 cup rice in a horizontal strip about one-third of the way up from the bottom edge of the tortilla. Top with one-fourth of the bean mixture, salsa, and cilantro leaves.
- Fold in the two sides of the tortilla and roll tortilla away from you (burrito-style).
- Repeat with remaining ingredients.

INGREDIENTS
- 1teaspoon gratedorange rind
- 2cupsfresh orange juice
- 1/3cupcraisins
- 1/2tablespoonbutteror margarine
- 1/2teaspoonsalt
- 1/4teaspoonground cinnamon
- 1teaspoon mincedfresh ginger
- 1 (10 ounce)packagecouscous
- 1/4cupsliced almonds, toasted
DIRECTIONS
- Add the first 7 ingredients to a saucepan; bring to a boil over medium heat, stir frequently.
- Remove saucepan from heat.
- Add in couscous; stir to combine.
- Cover and let stand 5 minutes.
- Fluff with a fork.
- Stir in almonds; serve.

INGREDIENTS
- 10tomatoes
- 4ouncesbutter
- 10eggs
- 5ouncescheese
- black pepper
- salt
DIRECTIONS
- Cut out the upper part (or lid) of the tomatoes and hollow them.
- Drain any excess juice, sprinkle with salt and put the tomatoes in a greased pan.
- Divide the butter into 10 pieces, place one in each tomato and break an egg over it.
- Bake for 20 min in a preheated oven at medium temperature.
- Serve hot, sprinkle with cheese and black pepper.

INGREDIENTS
- 10eggs
- 10ouncescheese
- 1bunchparsley(chopped)
- 7ouncesdried breadcrumbs
- salt
- black pepper
- fryingfat
DIRECTIONS
- Beat the eggs with the rest of the ingredients.
- Heat the frying fat and place the mixture in it in spoonfuls to form cutlets.
- Serve with tomato sauce and/or a fresh seasonal salad.
- NOTE: I suppose that if the mixture is too liquid and wont form cutlets you can increase the quantity of cheese and/or breadcrumb; or you could also add the eggs one at a time to make sure the texture comes out right.
