INGREDIENTS
- 10cups crustycountry bread, 1 inch cubes(1 lb)or2 packages pepperidge farmseasoned stuffing mix(I use this. Don’t use Stovetop stuffing mix!)
- 3mediumonions, chopped
- 3celery ribs, thinly sliced crosswise
- 1tablespoondried thyme
- 1tablespoondried sageor fresh sage
- 1tablespoondried rosemaryor fresh rosemary
- 1/2cupunsalted butter
- 2cupschicken broth
DIRECTIONS
- If you’re using bread, toast bread in a large shallow baking pan in middle of oven until just dry, 25 to 30 minutes.
- If you’re using stuffing mix, you can skip this step.
- Cook onions, celery, and herbs in butter in a large heavy skillet over moderately low heat, stirring occasionally, until celery is softened, about 10 minutes.
- Stir together bread or stuffing mix, vegetables, broth, and salt and pepper to taste, then cool completely, uncovered.
- Freezes extremely well.
- Stuff in the turkey or bake at 350 for about 30 minutes.

INGREDIENTS
- 500gwhite fish fillets
- 80mlcream cheese
- 80mlmayonnaise
- 100gcheddar cheese, grated
- 10mllemon juice
- fresh coarse ground black pepper
- choppedparsley
DIRECTIONS
- Place fish in greased oven proof dish.
- Combine remaining ingredients and spread over fish.
- Bake at 190°C for 20 minutes.

- 4cupscream of asparagus soup
- 2cupscrabmeat
- 1cupevaporated milkor cream
- salt and pepper, to taste
DIRECTIONS
- Combine ingredients in a pot and heat gently stirring occasionally.
- Serve hot.

INGREDIENTS

SALAD
- 500gcorn kernels
- 250gfresh carrots, coarsely grated
- 3stalkscelery, finely chopped
- 125gcheddar cheese, coarsely grated
- 1headromaine lettuce
-
DRESSING
- salt and pepper, to taste
- 250mlplain yogurt
- 5mlwhole grain mustard
DIRECTIONS
- Line serving platter with lettuce leaves.
- Mix together, corn, carrot, celery and cheddar cheese and spoon over lettuce.
- Mix together dressing ingredients and pour over salad.
- Chill until needed.

INGREDIENTS
- 1/2mediumhead of cabbage, cut into cubes
- 1/2cupraisins
- 1/4cupmixed nuts, chopped coarsely
- 3-4tablespoonsmayonnaise
- 1-2tablespoon hotdogrelish
- salt and pepper, if needed
DIRECTIONS
- Place cabbage & raisins into pan and add just enough boiling water to steam for about 5 minutes.The cabbage must not be limp and soggy!
- Pour off any excess water and place cabbage into serving dish.
- Mix together mayonnaise and hotdog relish and mix into cabbage whilst still hot.Season at this point if you need to.
- Sprinkle with nuts and serve warm.
