Stuffing for Christmas or Thanksgiving Recipe

INGREDIENTS

  1. 10cups crustycountry bread, 1 inch cubes(1 lb)or2 packages pepperidge farmseasoned stuffing mix(I use this. Don’t use Stovetop stuffing mix!)
  2. 3mediumonions, chopped
  3. 3celery ribs, thinly sliced crosswise
  4. 1tablespoondried thyme
  5. 1tablespoondried sageor fresh sage
  6. 1tablespoondried rosemaryor fresh rosemary
  7. 1/2cupunsalted butter
  8. 2cupschicken broth

DIRECTIONS

  1. If you’re using bread, toast bread in a large shallow baking pan in middle of oven until just dry, 25 to 30 minutes.
  2. If you’re using stuffing mix, you can skip this step.
  3. Cook onions, celery, and herbs in butter in a large heavy skillet over moderately low heat, stirring occasionally, until celery is softened, about 10 minutes.
  4. Stir together bread or stuffing mix, vegetables, broth, and salt and pepper to taste, then cool completely, uncovered.
  5. Freezes extremely well.
  6. Stuff in the turkey or bake at 350 for about 30 minutes.

Cheesy Fish Recipe

INGREDIENTS

  1. 500gwhite fish fillets
  2. 80mlcream cheese
  3. 80mlmayonnaise
  4. 100gcheddar cheese, grated
  5. 10mllemon juice
  6. fresh coarse ground black pepper
  7. choppedparsley

DIRECTIONS

  1. Place fish in greased oven proof dish.
  2. Combine remaining ingredients and spread over fish.
  3. Bake at 190°C for 20 minutes.

Crab Soup in a Hurry Recipe

  1. 4cupscream of asparagus soup
  2. 2cupscrabmeat
  3. 1cupevaporated milkor cream
  4. salt and pepper, to taste

DIRECTIONS

  1. Combine ingredients in a pot and heat gently stirring occasionally.
  2. Serve hot.

4 C Salad Recipe

INGREDIENTS

  1. SALAD

  2. 500gcorn kernels
  3. 250gfresh carrots, coarsely grated
  4. 3stalkscelery, finely chopped
  5. 125gcheddar cheese, coarsely grated
  6. 1headromaine lettuce
  7. DRESSING

  8. salt and pepper, to taste
  9. 250mlplain yogurt
  10. 5mlwhole grain mustard

DIRECTIONS

  1. Line serving platter with lettuce leaves.
  2. Mix together, corn, carrot, celery and cheddar cheese and spoon over lettuce.
  3. Mix together dressing ingredients and pour over salad.
  4. Chill until needed.

Hot Coleslaw Recipe

INGREDIENTS

  1. 1/2mediumhead of cabbage, cut into cubes
  2. 1/2cupraisins
  3. 1/4cupmixed nuts, chopped coarsely
  4. 3-4tablespoonsmayonnaise
  5. 1-2tablespoon hotdogrelish
  6. salt and pepper, if needed

DIRECTIONS

  1. Place cabbage & raisins into pan and add just enough boiling water to steam for about 5 minutes.The cabbage must not be limp and soggy!
  2. Pour off any excess water and place cabbage into serving dish.
  3. Mix together mayonnaise and hotdog relish and mix into cabbage whilst still hot.Season at this point if you need to.
  4. Sprinkle with nuts and serve warm.
