INGREDIENTS
- 1cupcorn oil
- 1lb gratedcarrots(3 cups)
- 6eggs, well beaten
- 2 1/2cupsflour
- 2 1/2cupssugar
- 1teaspoonsalt
- 1teaspoonallspice
- 1teaspoonground ginger
- 1teaspoonvanilla
- 1teaspoonground cloves
- 1teaspooncinnamon
- 1teaspoonground nutmeg
- 2 1/2teaspoonsbaking powder
- 1teaspoonbaking soda
- 1cupraisins (optional)
- 1cupwalnuts(grounded)
- 1teaspoonalmond essence

Cream Cheese Frosting
- 16ouncescream cheese
- 1/4cupbutter
- 1cupconfectioners’ sugar
- 1teaspoonvanilla
DIRECTIONS
- Preheat oven to 350°F.
- Grease and line 12 inch baking pan.
- Pour oil into bowl and add in carrots.
- Mix well.
- Add in eggs and sugar.
- Beat until sugar is dissolved.
- Add in dry sifted ingredients.
- Toss raisins lightly in flour and fold into batter along with nuts, essence.
- Blend thoroughly and bake in greased pan four 45 minutes or until toothpick inserted comes out clean.
- Beat cream cheese and butter untill fluffy add in sugar and vanilla.
- Beat until light and fluffy.

INGREDIENTS
- 1 1/2cupsall-purpose flour
- 1/2cupoat bran flour
- 1/2teaspoonbaking soda
- 1/2teaspoonsalt
- 3/4cupbutter, very softened
- 1cup packedbrown sugar
- 1/2cupgranulated sugar
- 1 1/2teaspoonsvanilla extract
- 1egg
- 1egg yolk
- 1 1/2cupssemi-sweet chocolate chips
- 1/2cup choppedpecans
DIRECTIONS
- Preheat oven to 325°, Grease cookie pan.
- Sift together flour,oat flour, soda and salt; set aside.
- In a medium bowl, cream together butter and sugars until well blended.
- Beat in vanilla, egg and yolk until light and creamy.
- Mix in dry ingredients by hand until blended.
- Stir in chocolate.
- Drop dough onto prepared cookie sheets.
- Bake about 12 to 15 minutes until edges are lightly brown.
- Cool on baking sheets for 1 minute.
- Cool completely onto brown paper bag.
- About 36 to 40 cookies.

INGREDIENTS
- 3 (10 ounce)boxesfrozen chopped spinach, thawed
- 1 (8 ounce)packagecream cheese, softened
- 1/4cupmayonnaise
- 1/4cup gratedparmesan cheese
- 1/4cup gratedromano cheese
- 2clovesgarlic, peeled and minced(I used jarred)
- 1/2teaspoondried basil
- 1/4teaspoonseasoning salt
- 1 (14 ounce)canartichoke hearts, drained and chopped
- 1/4cup shreddedmozzarella cheese
DIRECTIONS
- Preheat oven to 350.
- Lightly grease a 2-qt casserole dish.
- Drain thawed spinach- I wring it out in a cotton dish towel.
- Mix all ingredients except mozzarella in a large mixing bowl.
- Transfer mixture to baking dish, top with mozzarella.
- Bake covered for 15 minutes, remove cover and bake an additional 10 minutes, until bubbly.

INGREDIENTS
- 1 (3 ounce)packagelemon gelatin
- 1cupboiling water
- 8ouncescream cheese
- 1/2cupgranulated sugar
- 1teaspoonvanilla extract
- 1 (13 ounce)canMilnot Sweetened Condensed Milk, whipped
- 3cupsgraham cracker crumbs(or less if desired)
- 1/2cupbutter or margarine, melted
DIRECTIONS
- Dissolve gelatin in boiling water.
- Chill until slightly thickened.
- Cream together the cream cheese, sugar and vanilla.
- Add the gelatin and blend well.
- Fold it stiffly whipped milnot (this can be done with electric mixer) Mix graham cracker crumbs and melted butter together;pack 2/3 of mixture on bottom and sides of a 9×13 inch pan (or larger).
- Add filling and sprinkle with remaining crumbs.
- Chill several hours or overnight.
- Cut into squares and serve plain or garnish with fruit.

INGREDIENTS
- 2vidalia onions
- 2cupsflour
- 2cupswhite cornmeal
- 4cupsCrisco cooking oil(or enough for your personal fryer)
- 2quartsice water, divided
DIRECTIONS
- Slice onions 1/2 inch thick.
- Place rings into bowl of ice water.
- Take out rings one at a time and coat with flour.
- Gently dip ring into 2nd bowl of ice water, and then coat with corn meal.
- Drop into hot oil and fry until golden.
- Drain on paper towels.
