INGREDIENTS
- 1lbfeta cheese(preferably from ewe’s milk)
- 2tomatoes(about 5 oz)
- 1/2cupbutter
- 5eggs
- 1cupsoda water(just plain soda water with no flavor or sweeteners)
- 1/2teaspoonpaprika
- 2chilies(chopped)
- black pepper
DIRECTIONS
- Crush the cheese or cut it into slices and place it in a terracotta dish with a lid or, if you dont have one, a lidded dispensible aluminium dish.
- Arrange the sliced tomatoes and, butter and the chilies over it, cover the dish and bake for about 10 min.
- Beat the eggs with the soda and pour over the cheese and tomatoes; cover again and bake until the surface of the eggs becomes yellow and cooked.
- Serve sprinkled with black pepper.
- NOTE: Instead of chopping the chilies, you could place them whole over the egg mixture and let them bake with it; that however will mean adding 3 more so that there be one in each serving.

INGREDIENTS
- 2cups coldmilk, divided
- 2tablespoonschunky peanut butter
- 1cupwhipped topping, divided(Cool Whip is good)
- 1 (4 ounce)packageinstant chocolate pudding mix
DIRECTIONS
- In a small bowl, mix 2 tbsp milk with the peanut butter until smooth.
- Fold in 3/4 cup whipped topping; set aside.
- In another mixing bowl, beat pudding mix with the remaining milk until blended (about 2 minutes); let stand for 5 minutes.
- Spoon half of the pudding into six parfait glasses or bowls; evenly divide and top the chocolate pudding mixture with peanut butter mixture, and then with the remaining pudding.
- Garnish top with remaining whipped topping.

INGREDIENTS
- 1 (10 3/4 ounce)cancream of broccoli soup, undiluted
- 1 (10 3/4 ounce)cancream of chicken soup, undiluted
- 2cupsmilk
- 1/2cupsour cream(light is okay, do not use fat-free)
- 2cups shreddedmozzarella cheese
- 1cup shreddedcheddar cheese
- 2cups uncookedinstant rice(Minute rice is good)
- 2cups choppedfresh broccoli
- 1smallonion, chopped
- 1teaspoonpaprika, divided
- pepper
DIRECTIONS
- Set oven to 350 degrees.
- Grease a 13″ x 9″ baking pan.
- In a large bowl combine soups, milk and sour cream.
- Stir in cheeses, rice, broccoli, onion, 3/4 tsp of paprika and pepper.
- Transfer mixture to prepared baking dish.
- Sprinkle with remaining paprika.
- Cover and bake for 35 minutes.
- Uncover, bake 5-10 minutes longer, or until the rice and broccoli are tender.

INGREDIENTS
- 2lbssweet potatoes, peeled,and cut into 1 inch square
- 2tablespoonslemon juice
- 1cupmayonnaise(not salad dressing)
- 2tablespoonsorange juice
- 1tablespoonhoney
- 1-2teaspoonorange zest
- 1/2teaspoonginger
- 1/4teaspoonsalt
- 1/8teaspoonnutmeg
- 1cup slicedcelery
- 1/3cup choppeddates
- 1/2cup choppedpecans
- lettuce leaves
- 1 (11 ounce)canmandarin oranges, drained
DIRECTIONS
- In a medium saucepan, cook sweet potatoes in boiling salted water, until firm-tender, watch closely, (don’t overcook as they will be mushy) cook about 5-6 minutes.
- Drain well; toss with lemon juice.
- In a large bowl, combine mayo, orange juice, honey, orange peel, ginger, salt and nutmeg.
- Add the warm potatoes, celery and dates; toss to coat well.
- Cover and chill.
- Before serving, toss in pecans.
- For a nice presentation, spoon salad onto lettuce-lined platter.
- Arrange oranges around salad.

INGREDIENTS
- 1/2cupbutter
- 2 1/4cupssugar
- 6eggs, separated
- 1/3cupall-purpose flour
- 2teaspoonsbaking powder
- 1/3cupmilk
- 1cup choppedfilbertsor walnuts

FILLING
- 2cupsheavy cream(whipping)
- 2tablespoons powderedicing sugar
- additional choppednuts, for garnish
- fresh strawberries, for garnish (optional)
DIRECTIONS
- Line an 11 x 17- inch jelly-roll pan with parchment and butter the paper.
- Preheat oven to 350 F.
- In a large bowl, cream the butter and 1 cup of the sugar until fluffy and light.
- Add the egg yolks and beat until very light in texture.
- Stir in the flour, baking powder, and milk.
- Spread the batter in the prepared pan.
- Sprinkle half of the nuts on top.
- In a medium-sized bowl, beat the egg whites and the remaining sugar until stiff, to form a meringue.
- Spread the meringue over the batter.
- Top with the remaining nuts.
- Bake for 25 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- Remove from the pan, peel off the parchment paper, and cool.
- Cut the cake into two equal halves.
- TO PREPARE THE FILLING, in a large bowl, whip the cream and sugar until stiff peaks form.
- Spread half of the whipped cream over one half of the torte, MERINGUE–SIDE UP.
- Cover with the other half of the torte, MERINGUE–SIDE UP.
- Before serving, top with the remaining whipped cream and the chopped nuts.
- Garnish with strawberries, if desired.
- 16 servings.
