INGREDIENTS
- 3cups siftedflour
- 3teaspoonsbaking powder
- 1teaspoonsalt
- 1cupshortening
- 1cupsugar
- 2eggs
- 1cupmilk
- 1teaspoonvanilla

Struesel Mixture
- 1/2cup firmly packedbrown sugar
- 2tablespoonsflour
- 2teaspoonscinnamon
- 2tablespoons meltedbutteror margarine
- 1/2cup choppednuts
DIRECTIONS
- Mix and sift flour, baking powder and salt.
- Cream shortening and sugar until light and fluffy; add eggs, one at a time, beating well after each addition.
- Combine milk and vanilla and add alternately with dry ingredients to creamed mixture, beginning and ending with dry ingredients.
- Spread half the batter in well-greased ablong baking pan, 9×13x2 inches; sprinkle half the streusel mixture on top then add remaining batter; top with remaining streusel mixture.
- Bake at 350 degrees about one hour or until cake tests done; cut into squares to serve.
- STREUSEL MIXTURE: Blend brown sugar, flour, cinnamon, melted butter or margarine and chopped nuts until mixture is crumbly.

INGREDIENTS
- 1/2cupbutter, softened
- 3/4cupgranulated sugar
- 1egg
- 1 1/4cupsflour
- 1/4teaspoonsalt
- 1/2teaspoonbaking soda
- 1teaspooncream of tartar
- 1tablespoongranulated sugar
- 1tablespooncinnamon
DIRECTIONS
- In a large mixing bowl, cream together butter and 3/4 cup sugar.
- Add egg and beat well.
- In a separate bowl, sift together the flour, salt, baking soda, and cream of tartar.
- Add the sifted dry ingredients to the butter mixture.
- Cover and refrigerate for one hour.
- Preheat oven to 400°F.
- On a small plate, mix together 1 tablespoon sugar and 1 tablespoon cinnamon.
- Roll dough into balls about the size of a walnut.
- Roll each ball in the cinnamon sugar.
- Place on cookie sheet, leaving room between each ball.
- Bake 10 minutes or until edges are light brown.

INGREDIENTS
- 1/4cupbutter
- 3cupsmini marshmallows
- 1/2cuppeanut butter
- 4cupsCheerios toasted oat cereal
- 1cupsalted peanuts
DIRECTIONS
- Butter a 9-inch square baking pan.
- In a large saucepan, melt butter, marshmallows and peanut butter over low heat, stirring constantly until melted.
- Remove from heat and stir in Cheerios and peanuts.
- Pour into prepared pan, and pat down evenly with buttered hands.
- Cool completely before cutting into squares.

INGREDIENTS
- 2lbs unpeeled medium-large sizeshrimp
- 4largeeggs, beaten
- 2/3cup commercial spicyFrench dressing
- 1 1/2teaspoonslemon juice
- 3/4teaspoononion powder
- vegetable oil
- 1 1/3cups crushedsaltine crackers
- 2/3cup crushedcornflake cereal
- 1/3cupwhite cornmeal
DIRECTIONS
- Peel shrimp, leaving the tails intact; devein.
- Place shrimp in a large shallow bowl.
- Combine eggs, French dressing, lemon juice and onion powder.
- Pour over shrimp, stirring gently to coat.
- Cover and marinate in refrigerator for at least 3 hours, stirring occasionally.
- Pour oil to depth of 2-inches into a dutch oven; heat to 375°F.
- Combine cracker crumbs, crushed cornflakes, and cornmeal.
- Remove shrimp from marinade, discarding marinate.
- Dredge shrimp in cracker mixture and fry a few at a time until golden.
- Drain shrimp on paper towels.

- 3cups cookedrice, cooled
- 1 1/2cups cooked cubedchickensor turkey
- 3/4cup dicedfresh tomatoes
- 2tablespoons choppedbell peppers
- 2tablespoons choppedgreen onions
- 2tablespoons choppedfresh basil(1t. dried)
- 1/8teaspooncayenne pepper
- 4eggs, beaten
- 1/2cupmilk
- 3/4cup gratedcheese
- 3/4cup gratedmozzarella cheese
DIRECTIONS
- In a large bowl, combine rice, chicken, tomatoes, green pepper, onions basil cayenne eggs& milk.
- Maybe seasoned with salt& pepper.
- Spread into a 13×9″baking pan.
- Top with cheeses.
- Bake 20-25 min@350.
