Crock Pot Beef-Barley Bake Recipe

INGREDIENTS

  1. 1lbround steaks, cut in 1 inch pieces
  2. 3/4cupquick-cooking barley
  3. 1 (10 1/2 ounce)cancondensed golden mushroom soup
  4. 3/4cupwater
  5. 8-12ounces freshsliced mushrooms

DIRECTIONS

  1. Combine all ingredients in the slow cooker; mix well.
  2. Cover and cook on low for 7 to 8 hours.

Crock Pot Orange Cinnamon Chicken Recipe

INGREDIENTS

  1. 4lbschicken pieces
  2. 1cupchicken broth
  3. 1cupraisinsor sultanas
  4. 1tablespoonflour
  5. 1/4lbbutter
  6. 2cupsorange juice
  7. 1/4teaspooncinnamon
  8. salt and pepper

DIRECTIONS

  1. Heat butter in a large skillet, and brown chicken.
  2. Remove chicken to cooker as the brown.
  3. Combine all other ingredients, except flour, in skillet.
  4. Mix well and pour over chicken.
  5. Cover pot, turn on LOW and cook 4 to 6 hours, or until chicken is tender.
  6. Remove one cup of sauce from pot and combine with flour, mixing well.
  7. Return sauce flour mixture to the pot.
  8. Turn pot on HIGH and cook and additional half hour.

Tomatoes stuffed with Herbed Grains Recipe

INGREDIENTS

  1. 4mediumtomatoes or tomatoes, ripe but firm
  2. 1cupcooked riceor couscous or quinoa(or other grain)
  3. 1/2cup toastedpine nutsor almonds
  4. 3clovesgarlic, finely minced
  5. 3tablespoons freshparsley, finely minced or1-1 1/2 tablespoondried parsley
  6. 4tablespoonsparmesan cheese, grated
  7. salt & pepper
  8. sprayolive oilor vegetable oil

DIRECTIONS

  1. Cut the tops from the tomatoes- save.
  2. Scoop out the inside of the tomatoes leaving a solid shell, chop the tomato pulp.
  3. Mix the pulp with the grain, nuts, garlic, parsley cheese and season with salt& pepper.
  4. Fill the tomatoes with the mixture, replace tops.
  5. Spray the tomatoes lightly with oil, set them close together in an oven proof dish.
  6. Bake in 375F oven for apprx 25 minutes or until hot through.
  7. Remove carefully.

Cinnamon Nutmeg Roasted Chicken Recipe

INGREDIENTS

  1. 1chicken
  2. 1smallonion, minced
  3. 2teaspoonssugar
  4. 2teaspoonsdried thyme
  5. 1teaspoonsalt
  6. 1/2teaspoonground nutmeg
  7. 1/2teaspoonground cinnamon

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Coat a roasting pan with nonstick cooking spray.
  3. Place chicken in pan.
  4. In a small bowl, combine remaining ingredients and mix well.
  5. Rub mixture evenly over chicken.
  6. Bake 60 to 90 minutes until chicken is no longer pink and juices run clear.

Apple & Sweet Potato Casserole Recipe

INGREDIENTS

  1. 2largesweet potatoes, peeled,halved and cut into 1/2 inch thick slices
  2. 2tart apples, peeled,cored and cut into thin slices
  3. 2vegetarian sausage patties
  4. 1/2teaspooncinnamon
  5. 1pinchnutmeg

DIRECTIONS

  1. Boil the sweet potato slices until just barely tender.
  2. Meanwhile, in a non-stick skillet.
  3. Cook the veg sausage until well browned and crumbled.
  4. Mix together the cooked sweet potatoes, apples, cooked sausage, corn, cinnamon and nutmeg.
  5. Transfer to a glass baking dish, cover and cook in a 350 degree oven until the apples are tender (about 45 minutes).
  6. Serve hot.
