INGREDIENTS

Marinade
- 2tablespoonshot sauce
- 2tablespoonsground cumin
- 1teaspoonallspice
- 2tablespoonschili powder
- fresh oregano
- thyme, combined(or a couple shakes of dried)
- 1/2bottlebeer
- 1tablespoonolive oil

The stuffing
- 1/2lbsteak or4 boneless chicken breasts
- olive oil
- 1largeonion, cut in 1/2 inch strips
- 1green bell pepper, seeded & cut in 1/2 inch strips
- 2poblano chiles, cut into strips (optional)
- salt & pepper

Pico De Gallo (fresh salsa)
- finely choppedtomatoes
- serrano peppers or jalapeno chiles, chopped fine
- mincedonions
- cilantro
- mint (optional)
- salt
- andtortillas
DIRECTIONS
- Mix marinade and set aside.
- Coat meat or poultry and let sit.
- Mix together pico de gallo in small bowl and set aside.
- In saucepan, drizzle with olive oil over med-high heat.
- Add onions, peppers and chiles- toss occasionally and turn off heat once tender.
- In second skillet over high heat, drop meat or poultry in and sear for 2 mins each side.
- Remove from heat, slice thin and return to pan to brown and cook through.
- Warm tortillas according to package, fill with meat, poultry, peppers and pico de gallo- MMMM!

INGREDIENTS
- 2lbsround steaksor sirloin
- 3-4tablespoonsoil
- 4sliceslemons
- 3medium slicedonions
- 2-3cloves fresh mincedgarlic
- 1/2cupflour
- 1 (10 ounce)canbeef broth, undiluted
- 1canbeer or1 bottlebeer
- 3tablespoonsbrown sugar
- 1tablespoondried parsley or1/4 cup choppedfresh parsley(or to taste)
- 2teaspoonsdried thyme
- salt and pepper
- 8ounces cookednoodles or2 cupscooked rice
DIRECTIONS
- Set oven to 325 degrees.
- Cut steak into serving-size pieces.
- Add the lemon slices to the oil: brown beef on both sides in hot oil with the lemon.
- Remove the beef to a pan large enough in which to bake it.
- Layer onions and garlic over the browned beef in a cassreole dish.
- Sprinkle 1/2 cup flour over the top of onions and garlic.
- In a bowl, combine the beef bouillon, beer, sugar, parsley, thyme, salt and pepper.
- Pour over the meat; bake uncovered in a 325 degree oven for 2-1/2- 3 hours.
- Serve over cooked noodles or cooked rice.

INGREDIENTS

Onions
- 1tablespoonolive oil
- 2largeyellow onions
- 1dashsalt and pepper
- 2dashessteak seasoning

Meat
- 2teaspoonsolive oil
- 1 1/4lbslean sirloin steaks, sliced very thin
- 1teaspoongarlic salt
- black pepper
- 8slicesprovolone cheese
- 4hoagie rolls
DIRECTIONS
- In sauce pan over med-high heat, add olive oil, oinions and seasonings.
- Toss occasionally and cook until soft.
- On griddle pan or large sauce pan, wipe with olive oil and paper towel and heat to med-high to high heat.
- Sear and cook meat until brown- about 2 mins each side- careful not to overcook.
- Remove from heat and sprinkle with seasonings.
- Toss meat and onions together.
- Lay cheese out on rolls and top with meat& onion mixture to melt cheese.

INGREDIENTS
- 2tablespoonsmargarine
- 1/2cup choppedonions
- 1/2cup choppedcelery
- 1/2cup choppedcarrots
- 2tablespoonsflour
- 1/2teaspoondry mustard
- 2cupschicken brothor water
- 4cups coarsley choppedbroccoli
- 2cupsmilk
- 2cups shreddedcheddar cheese
DIRECTIONS
- Melt margarine in a saucepan, add onion, celery & carrot,cook until softened, about 3 min.
- Add flour & mustard, cook stirring for a minute or two.
- ‘Stir in broth & broccoli, bring to a boil.
- Simmer covered, stirring occasionally until broccoli & veggies are tender, about 10 min.
- Place broccoli mixture in a blender & process until smooth.
- Return to pan & stir in milk.
- Bring to a boil over medium heat.
- Add cheese, stir just until melted.

INGREDIENTS
- 1 1/2cups grated uncooked peeledsweet potatoes
- 1 1/2cups grated garden unpeeledzucchini
- 1cup choppedpecans
- 2cups all purposeunbleached flour
- 2teaspoons ground freshcinnamon
- 1teaspoonbaking soda
- 1/2teaspoonsalt
- 1/2teaspoonbaking powder
- 2cupsgranulated sugar
- 3/4cupcanola oil
- 3largeeggs
- 2teaspoonsvanilla
DIRECTIONS
- Preheat oven to 350 degrees F.
- Grease and flour a 9 x 5 x 3 inch loaf pan.
- Sift flour, cinnamon, soda, baking powder, and salt.
- Beat sugar, oil, eggs, and vanilla extract in a large bowl.
- Mix in the grated vegetables.
- Combine the dry ingredients and nuts.
- Pour into prepared pan.
- Bake 70 minutes, or until tester comes away clean.
- Cool in the pan 20 minutes.
- Then invert onto cooling rack.
- When completely cooled wrap in foil, store at room temp.
- Nice moist loaf.
- Can be prepared the day before serving.
