Pineapple Casserole Recipe

INGREDIENTS

  1. 1 (20 ounce)canchunk pineapple, drained(savethe juice)
  2. 1cup gratedcheese
  3. 1/2cup meltedmargarineor butter
  4. 1/2cupsugar
  5. 1/4cup reservedpineapple juice
  6. 3tablespoonsflour
  7. 1cup crushedRitz crackers

DIRECTIONS

  1. Pour drained pineapple into baking dish.
  2. Mix sugar, pineapple juice and flour.
  3. Pour over pineapple and stir.
  4. Stir in grated cheese.
  5. Mix crushed crackers with melted margarine and spread over cheese.
  6. Bake at 350 º F for 30 minutes.

Seared Sea Scallops Recipe

INGREDIENTS

  1. 1lbsea scallops
  2. 2tablespoonsbutteror margarine
  3. 3garlic cloves, minced
  4. 2tablespoonsdry white wine
  5. 1tablespoonfresh parsley, finely chopped
  6. 1/8teaspoonsalt
  7. 1/2teaspoon coarsleyground pepper
  8. 1/2cupflour

DIRECTIONS

  1. Rinse scallops and pat dry with a paper towel.
  2. Combine flour, salt, pepper and parsley.
  3. Heat a 12-inch skillet over medium high heat.
  4. Add 2 tbsp of butter or margarine and the garlic; cook and stir until butter is melted.
  5. Dredge scallops in flour mixture, add to skillet and cook, stirring frequently for 2-3 minutes or until scallops turn opaque.
  6. Remove scallops and add wine to skillet and stir for l minute.
  7. Drizzle wine mixture over scallops and serve.

Savoury Slowroast Brisket Recipe

INGREDIENTS

  1. 2 1/2kgbeef brisket, as un-fatty as possible
  2. salt and pepper
  3. 3largeonions, sliced
  4. 3largecarrots, diced
  5. 3slicesbacon, chopped
  6. 3garlic cloves, chopped
  7. 1green pepper, seeded and diced
  8. 1/2cupparsley, chopped
  9. 3mlcelery salt
  10. 3mldried thyme
  11. 3mldried oregano
  12. 375mlred wine
  13. 375mlbeef stock

DIRECTIONS

  1. Rub salt and pepper all over brisket.
  2. Brown on all sides in pan then remove to cool.
  3. Place pan drippings into casserole place all vegetables into dish.
  4. Sprinkle celery salt, thyme and origanum over.
  5. Put meat on top of vegetables.
  6. Pour in wine and stock.
  7. Cover loosely with foil and bake at 160C for 1 ½ hours.
  8. Turn meat over and continue baking for 2 more hours.
  9. Remove meat, pour over a little of the gravy and thicken the rest.

Double Rich Chocolate Cookies Recipe

INGREDIENTS

  1. 2 1/2cupsflour
  2. 1/2teaspoonbaking soda
  3. 1/2cupcocoa powder
  4. 1cupbrown sugar, packed
  5. 3/4cupwhite sugar
  6. 1cupbutter, softened
  7. 3eggs
  8. 2teaspoonsvanilla
  9. 2cupschocolate chips

DIRECTIONS

  1. Preheat oven to 300°F.
  2. In a medium bowl combine flour, soda and cocoa powder.
  3. Mix well with a wire whisk and set aside.
  4. In a large bowl blend sugars with an electric mixer at medium speed.
  5. Add butter and beat to form a grainy paste.
  6. Scrape down sides of bowl, then add eggs and vanilla.
  7. Beat at medium speed until light and fluffy.
  8. Add the flour mixture and chocolate chips and blend at low speed just until combined.
  9. Do not overmix.
  10. Drop dough by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart.
  11. Bake for 21-23 minutes.
  12. Transfer cookies with a spatula to a cool surface.

Fruit Cocktail Pudding Recipe

INGREDIENTS

  1. Batter

  2. 2cupsflour
  3. 3teaspoonsbaking powder
  4. 1 1/4cupssugar
  5. 2teaspoonsbaking soda
  6. 2eggs, beaten
  7. 1 (30 ounce)canfruit cocktail, juice included
  8. Topping

  9. 3/4cupsugar
  10. 1/2cupmilk
  11. 1/2cupcoconut
  12. 4tablespoonsbutter
  13. 1teaspoonvanilla extract

DIRECTIONS

  1. Mix all batter ingredients well with wooden spoon.
  2. Pour into large greased pie dish.
  3. Bake at 350F for 40 – 50 minutes.
  4. Boil together topping ingredients for 5 minutes.
  5. As pudding comes out of oven stab it all over with a knife and pour topping over.
