South Texas Carne Guisada Recipe

INGREDIENTS

  1. 3lbssirloin
  2. 2tablespoonsoil
  3. 1clovegarlic, mashed
  4. 1teaspoonground cumin
  5. 1/2teaspoonchili powder
  6. 4tablespoonsflour
  7. 1canbeef broth
  8. 3/4cupwater
  9. salt and pepper

DIRECTIONS

  1. Cut beef into 3/4-inch cubes.
  2. In nonstick skillet over medium heat, saute beef until brown.
  3. Add oil and flour and toss with beef until flour is brown.
  4. Add water and spices, stirring well.
  5. Add beef broth and reduce heat to medium low.
  6. Simmer approximately 30 minutes until beef is tender.
  7. (If sauce seems too thin, add a bit more flour to desired consistency.) Serve spooned onto flour tortillas (like tacos).
  8. Garnish with sour cream, cheese and pico de gallo.

Beef & Black Bean Chili Recipe

INGREDIENTS

  1. 2lbsboneless beef chuck roast, cut into 3/4 inch cubes or beef stew meat
  2. 2cansblack beans, rinsed and drained
  3. 3tablespoonsoilor vegetable oil
  4. 2largegreen bell peppers, chopped
  5. 1largeonion, chopped
  6. 2-4jalapeno peppers, seeded and finely chopped (optional)
  7. 3clovesgarlic, crushed
  8. 1/4cupchili powder
  9. 1tablespoonground cumin
  10. 1teaspoonsalt
  11. 1/2teaspoonblack pepper
  12. 1 (28 ounce)cancrushed tomatoes
  13. shreddedcheddar cheese (optional)
  14. sour cream (optional)
  15. slicedgreen onions (optional)

DIRECTIONS

  1. Drain and rinse black beans.
  2. Trim excess fat from roast, cut into 3/4-inch cubes.
  3. Heat oil in dutch oven over medium heat.
  4. Add bell peppers, onion, jalapenos and garlic; cook 10 minutes or until tender, stirring frequently.
  5. Increase heat to high; add beef cubes and brown on all sides.
  6. Reduce heat to low.
  7. Add chili powder, cumin, salt and pepper.
  8. Stir in tomatoes.
  9. Cover and simmer approximately 1 hour and 20 minutes until meat is fork tender.
  10. Add beans and heat through.
  11. Serve in bowls and garnish with cheese, sour cream and green onions as desired.

Orange Smoothie Recipe

  1. 6ouncesorange juice concentrate, frozen
  2. 1cupmilk
  3. 1cupwater
  4. 1/4cupsugar
  5. 1/2teaspoonvanilla
  6. 10ice cubes

DIRECTIONS

  1. Place all ingredients in a blender.
  2. Cover and blend until smooth.
  3. Serve immediately.

Shaved Fennel & Apple Salad Recipe

INGREDIENTS

  1. 1/4cup freshly squeezedlemon juice
  2. 2tablespoons choppedfresh tarragon
  3. 1/3cupextra-virgin olive oil
  4. 1/3cupcanola oil
  5. salt & freshly ground black pepper
  6. 2granny smith apples, peeled,cored,and halved
  7. 2headsfennel, thinly sliced

DIRECTIONS

  1. Whisk together the lemon juice, chopped tarragon, and olive and canola oils in a small bowl and season to taste with salt and pepper.
  2. Cut the apple into thin slices and place in a medium bowl with the fennel.
  3. Toss with the vinaigrette and season to taste with salt and pepper.

Basic Fajita Marinade Recipe

INGREDIENTS

  2. 1/3cupsoy sauce
  3. 1/3cupred wine vinegar
  4. 1/2cupolive oil

DIRECTIONS

  1. In a blender, whirl garlic, soy sauce, and red wine vinegar until smooth.
  2. With blender running, pour in olive oil slowly to make an emulsified marinade.
