INGREDIENTS
- 3lbssirloin
- 2tablespoonsoil
- 1clovegarlic, mashed
- 1teaspoonground cumin
- 1/2teaspoonchili powder
- 4tablespoonsflour
- 1canbeef broth
- 3/4cupwater
- salt and pepper
DIRECTIONS
- Cut beef into 3/4-inch cubes.
- In nonstick skillet over medium heat, saute beef until brown.
- Add oil and flour and toss with beef until flour is brown.
- Add water and spices, stirring well.
- Add beef broth and reduce heat to medium low.
- Simmer approximately 30 minutes until beef is tender.
- (If sauce seems too thin, add a bit more flour to desired consistency.) Serve spooned onto flour tortillas (like tacos).
- Garnish with sour cream, cheese and pico de gallo.

INGREDIENTS
- 2lbsboneless beef chuck roast, cut into 3/4 inch cubes or beef stew meat
- 2cansblack beans, rinsed and drained
- 3tablespoonsoilor vegetable oil
- 2largegreen bell peppers, chopped
- 1largeonion, chopped
- 2-4jalapeno peppers, seeded and finely chopped (optional)
- 3clovesgarlic, crushed
- 1/4cupchili powder
- 1tablespoonground cumin
- 1teaspoonsalt
- 1/2teaspoonblack pepper
- 1 (28 ounce)cancrushed tomatoes
- shreddedcheddar cheese (optional)
- sour cream (optional)
- slicedgreen onions (optional)
DIRECTIONS
- Drain and rinse black beans.
- Trim excess fat from roast, cut into 3/4-inch cubes.
- Heat oil in dutch oven over medium heat.
- Add bell peppers, onion, jalapenos and garlic; cook 10 minutes or until tender, stirring frequently.
- Increase heat to high; add beef cubes and brown on all sides.
- Reduce heat to low.
- Add chili powder, cumin, salt and pepper.
- Stir in tomatoes.
- Cover and simmer approximately 1 hour and 20 minutes until meat is fork tender.
- Add beans and heat through.
- Serve in bowls and garnish with cheese, sour cream and green onions as desired.

- 6ouncesorange juice concentrate, frozen
- 1cupmilk
- 1cupwater
- 1/4cupsugar
- 1/2teaspoonvanilla
- 10ice cubes
DIRECTIONS
- Place all ingredients in a blender.
- Cover and blend until smooth.
- Serve immediately.

INGREDIENTS
- 1/4cup freshly squeezedlemon juice
- 2tablespoons choppedfresh tarragon
- 1/3cupextra-virgin olive oil
- 1/3cupcanola oil
- salt & freshly ground black pepper
- 2granny smith apples, peeled,cored,and halved
- 2headsfennel, thinly sliced
DIRECTIONS
- Whisk together the lemon juice, chopped tarragon, and olive and canola oils in a small bowl and season to taste with salt and pepper.
- Cut the apple into thin slices and place in a medium bowl with the fennel.
- Toss with the vinaigrette and season to taste with salt and pepper.

- 1/3cupsoy sauce
- 1/3cupred wine vinegar
- 1/2cupolive oil
DIRECTIONS
- In a blender, whirl garlic, soy sauce, and red wine vinegar until smooth.
- With blender running, pour in olive oil slowly to make an emulsified marinade.
