Grilled Jamaican Jerk Chicken Recipe

INGREDIENTS

  1. 2tablespoonslemon juice concentrate
  2. 2tablespoonslime juice concentrate
  3. 1tablespoonDijon mustard
  4. 1jalapeno pepper, seeded & finely chopped
  5. 1clovegarlic, finely chopped
  6. 2teaspoonsinstant chicken bouillon
  7. 1/2teaspoonground cumin
  8. 1/4teaspoondried thyme leaves
  9. 4boneless skinless chicken breasts(1 lb.)

DIRECTIONS

  1. In shallow dish or plastic bag, combine 3 tbsps.
  2. water and all ingredients except chicken.
  3. Add chicken, coating well with marinade.
  4. Cover dish or seal bag; marinate in refrigerator 4 hours or overnight.
  5. Prepare outdoor grill or preheat broiler.
  6. Remove chicken from marinade; pour marinade into small saucepan and bring to a boil.
  7. Grill or broil chicken 15 to 20 minutes, turning occasionally and basting frequently with marinade.
  8. Serve hot.

Waldorf Astoria Beef Stew Recipe

INGREDIENTS

  1. 3lbslean beef, cut in cubes
  2. 2mediumonions, chopped
  3. 2cupscarrots, cut in rounds
  4. 1cup slicedcelery
  5. 4mediumpotatoes, cubed(I leave skins on)
  6. 2teaspoonssalt
  7. 1dashpepper
  8. 2 1/2tablespoonstapioca
  9. 2cupstomato juice(I use V-8)
  10. 1/2head choppedcabbage, if you like it

DIRECTIONS

  1. Throw this all together in a large dutch oven and cook, covered in slow oven, 250, for 5 hours.

Apple Syrup Cake Recipe

INGREDIENTS

  1. CAKE

  2. 3tablespoonsbutter
  3. 2/3cupsugar
  4. 3eggs
  5. 1cupcake flour
  6. 2teaspoonsbaking powder
  7. 1pinchsalt
  8. 1teaspoonvanilla extract
  9. 1/4cupmilk
  10. 2cups sliced cookedapples
  11. SYRUP

  12. 1/2cupmilk
  13. 1/2cupsugar
  14. 1/4cupbutter

DIRECTIONS

  1. Cream butter and sugar.
  2. Add eggs one by one beating well after each addition.
  3. Sift dry ingredients together and add to mixture.
  4. Add milk mixing well.
  5. Add vanilla extract.
  6. Pour into greased Pyrex dish (9” x 12″) and spread evenly.
  7. Pack apple pieces evenly over batter.
  8. Bake at 350F for 30 minutes checking at 25 minutes.
  9. Boil all syrup ingredients together for 5 minutes and pour over hot cake as soon as it comes out of the oven.
  10. Serve as a cake or dessert with custard or cream.

Never Fail Fudge Recipe

INGREDIENTS

  1. 2 1/2cupssugar
  2. 1/4cupbutter
  3. 1 (5 ounce)canevaporated milk
  4. 1 (7 1/2 ounce)jarmarshmallow creme
  5. 3/4teaspoonsalt
  6. 3/4teaspoonvanilla
  7. 12ouncessemisweet chocolate chunks

DIRECTIONS

  1. Combine first 5 ingredients.
  2. Stir over low heat until well blended.
  3. Bring to a boil over moderate heat, being careful not to mistake air bubbles for boiling.
  4. Then boil slowly stiring constantly, for 5 minutes to soft ball stage on a thermometer 234 degrees.
  5. Remove from heat.
  6. Stir in chocolate,marshmallow creme and vanilla until chocolate is melted.
  7. Then turn into a buttered 9″ x 9″ pan to cool.

Honey Baked Chicken Recipe

INGREDIENTS

  1. 4boneless chicken breast halves
  2. 1/3cupmargarine, melted
  3. 1/3cuphoney
  4. 2tablespoonsprepared mustard
  5. 1teaspoonsalt
  6. 1teaspooncurry powder
  7. 1/4-1/2teaspoonTabasco sauce

DIRECTIONS

  1. Place skinless, boneless chicken in a 13×9x2 pan.
  2. Combine all remaining ingredients and pour over chicken.
  3. Bake at 350 degrees for 1 to 1-1/4 hours basting with the pan juices every 15 minutes.
  4. Serve with rice.
