INGREDIENTS
- 2tablespoonslemon juice concentrate
- 2tablespoonslime juice concentrate
- 1tablespoonDijon mustard
- 1jalapeno pepper, seeded & finely chopped
- 1clovegarlic, finely chopped
- 2teaspoonsinstant chicken bouillon
- 1/2teaspoonground cumin
- 1/4teaspoondried thyme leaves
- 4boneless skinless chicken breasts(1 lb.)
DIRECTIONS
- In shallow dish or plastic bag, combine 3 tbsps.
- water and all ingredients except chicken.
- Add chicken, coating well with marinade.
- Cover dish or seal bag; marinate in refrigerator 4 hours or overnight.
- Prepare outdoor grill or preheat broiler.
- Remove chicken from marinade; pour marinade into small saucepan and bring to a boil.
- Grill or broil chicken 15 to 20 minutes, turning occasionally and basting frequently with marinade.
- Serve hot.

INGREDIENTS
- 3lbslean beef, cut in cubes
- 2mediumonions, chopped
- 2cupscarrots, cut in rounds
- 1cup slicedcelery
- 4mediumpotatoes, cubed(I leave skins on)
- 2teaspoonssalt
- 1dashpepper
- 2 1/2tablespoonstapioca
- 2cupstomato juice(I use V-8)
- 1/2head choppedcabbage, if you like it
DIRECTIONS
- Throw this all together in a large dutch oven and cook, covered in slow oven, 250, for 5 hours.

INGREDIENTS

CAKE
- 3tablespoonsbutter
- 2/3cupsugar
- 3eggs
- 1cupcake flour
- 2teaspoonsbaking powder
- 1pinchsalt
- 1teaspoonvanilla extract
- 1/4cupmilk
- 2cups sliced cookedapples
-
SYRUP
- 1/2cupmilk
- 1/2cupsugar
- 1/4cupbutter
DIRECTIONS
- Cream butter and sugar.
- Add eggs one by one beating well after each addition.
- Sift dry ingredients together and add to mixture.
- Add milk mixing well.
- Add vanilla extract.
- Pour into greased Pyrex dish (9” x 12″) and spread evenly.
- Pack apple pieces evenly over batter.
- Bake at 350F for 30 minutes checking at 25 minutes.
- Boil all syrup ingredients together for 5 minutes and pour over hot cake as soon as it comes out of the oven.
- Serve as a cake or dessert with custard or cream.

INGREDIENTS
- 2 1/2cupssugar
- 1/4cupbutter
- 1 (5 ounce)canevaporated milk
- 1 (7 1/2 ounce)jarmarshmallow creme
- 3/4teaspoonsalt
- 3/4teaspoonvanilla
- 12ouncessemisweet chocolate chunks
DIRECTIONS
- Combine first 5 ingredients.
- Stir over low heat until well blended.
- Bring to a boil over moderate heat, being careful not to mistake air bubbles for boiling.
- Then boil slowly stiring constantly, for 5 minutes to soft ball stage on a thermometer 234 degrees.
- Remove from heat.
- Stir in chocolate,marshmallow creme and vanilla until chocolate is melted.
- Then turn into a buttered 9″ x 9″ pan to cool.

INGREDIENTS
- 4boneless chicken breast halves
- 1/3cupmargarine, melted
- 1/3cuphoney
- 2tablespoonsprepared mustard
- 1teaspoonsalt
- 1teaspooncurry powder
- 1/4-1/2teaspoonTabasco sauce
DIRECTIONS
- Place skinless, boneless chicken in a 13×9x2 pan.
- Combine all remaining ingredients and pour over chicken.
- Bake at 350 degrees for 1 to 1-1/4 hours basting with the pan juices every 15 minutes.
- Serve with rice.
