South African Melktert (Milktart) Recipe

INGREDIENTS

  1. 2prepared graham cracker crusts
  2. FILLING

  3. 1litermilk
  4. 1 1/4cupscake flour
  5. 1cupwhite sugar
  6. 1teaspoonvanilla extract
  7. 1teaspoonalmond extract
  8. 1pinchsalt
  9. 4eggs, separated
  10. 1tablespoonmargarine
  11. 2teaspoonscinnamon

DIRECTIONS

  1. Heat 3 cups of milk to boiling point.
  2. Mix remaining milk, flour, sugar, extracts, salt and egg yolks together and add to hot milk.
  3. Cook until very thick and remove from stove.
  4. Whisk egg whites to stiff peak stage and add to milk mixture after it has been off the stove for 5 minutes.
  5. Stir in margarine and pour mixture into ready-made pie shells.
  6. Sprinkle with cinnamon.
  7. Refrigerate to cool and set.

" Can’t Fail" Holiday Fruitcake Recipe

INGREDIENTS

  1. 2 1/2cups siftedflour
  2. 1teaspoonbaking soda
  3. 2eggs, lightly beaten
  4. 1 (28 ounce)jar ready to usemincemeat(Borden’s or Nonesuch)
  5. 1 (15 ounce)cansweetened condensed milk
  6. 1cupwalnuts, coarsley chopped
  7. 1lbmixed candied fruit(2 cups)
  8. walnuts, for decorating
  9. maraschino cherries, for decorating

DIRECTIONS

  1. Butter a 9 inch springform pan.
  2. Line with wax paper.
  3. Butter again.
  4. Sift flour and baking soda.
  5. Combine eggs, mincemeat, sweetened condensed milk, chopped walnuts and candied fruit.
  6. Fold in dry ingredients.
  7. Pour into pan.
  8. Bake in 300°F oven for 2 hours, until center springs back and top is golden.
  9. Cool thoroughly.
  10. Turn out and remove wax paper.
  11. Refrigerate, well wrapped, at least 24 hours before decorating, slicing and serving.

Fruitcake Sauce Recipe

INGREDIENTS

  1. 1cuplight brown sugar
  2. 1 1/2tablespoonsbutteror margarine
  3. 1/2cupflour
  4. 1 1/2cupscold water
  5. 2teaspoonscider vinegar
  6. 1/2teaspoonground nutmeg

DIRECTIONS

  1. Cut in butter to brown sugar.
  2. Add flour and mix well.
  3. Blend in water.
  4. Cook until thick.
  5. Add vinegar and nutmeg.
  6. Serve warm.

Cranberry Champagne Recipe

  1. 1/4cupcranberry liqueur
  2. 2tablespoonsGrand Marnier
  3. 1tablespoonsweet vermouth
  4. 750ml chilledchampagne

DIRECTIONS

  1. In a two quart container, combine cranberry liqueur, Grand Marnier, and vermouth.
  2. Add champagne to mixture.
  3. Serve immediately.

Pumpkin - Eggnog Pie Recipe

INGREDIENTS

  1. 1 (15 ounce)canpumpkin
  2. 2eggs
  3. 3/4cupsugar, plus
  4. 1tablespoonsugar
  5. 1teaspoonground cinnamon
  6. 1/2teaspoonground ginger
  7. 1/2teaspoonground nutmeg
  8. 1/4teaspoonground cloves
  9. 1/2teaspoonsalt
  10. 1 1/2cupseggnog
  11. 1 unbaked9 inch pie shell

DIRECTIONS

  1. Preheat oven to 425 degrees.
  2. In a medium bowl, beat pumpkin, eggs, sugar, spices, and salt until smooth.
  3. Slowly stir in eggnog.
  4. Pour into crust; bake 15 minutes.
  5. Refduce heat to 350 degrees.
  6. Bake 35 to 40 minutes longer or until a knife inserted in center comes out clean.
  7. Cool; cover and store in refrigerator.
