INGREDIENTS
- 2boneless skinless chicken breasts
- 1 3/4cupschicken broth
- 1/4cupsoy sauce
- 1tablespoonLea & Perrins Worcestershire Sauce
- 1lbfresh spinach leaves, rinsed and stemmed
- 8cupsboiling water
- 2 (16 ounce)cansmandarin oranges, drained

Dip
- 1/4cupmayonnaise
- 1/4cupsour cream
- 2teaspoonscurry powder
- 3tablespoonsapricot preserves
DIRECTIONS
- Cut chicken into 1-inch cubes.
- In a 10-inch skillet, combine chicken cubes, broth, soy sauce and Worcestershire.
- Heat to boiling over medium heat; cover, reduce heat, and simmer until chicken is fork-tender (about 10-15 minutes).
- With a slotted spoon, remove chicken from broth and let cool slightly.
- Place spinach leaves in a colander.
- Pour boiling water over leaves.
- Drain and set aside to cool.
- Place a cube of chicken at stem end of a spinach leaf and wrap leaf around chicken so that chicken still shows on sides.
- Secure end of leaf with a wooden pick.
- Refrigerate at least 1 hour.
- (Recipe can be prepared up to this point one day ahead.) To serve, place one mandarin orange at the end of each wooden pick.
- Serve with Curry Mayonaise Dip (recipe follows).
- Curry Mayonaise Dip: Blend all ingredients and refrigerate to allow flavors to mature.

INGREDIENTS
- 7ounces uncookedpasta shells
- 1cup halvedcherry tomatoes
- 1cup halvedripe olives
- 1 (6 ounce)packagemozzarella cheese, cut into thin strips
- 1/2cup choppedgreen peppers
- 4green onions, sliced
- 4ouncessalami, cut into thin strips

DRESSING
- 1/3cupvegetable oil
- 3tablespoonscider vinegaror red wine vinegar
- 1teaspoonsalt
- 1teaspoondried basil
- 1teaspoondried oregano
- 1/4teaspoongarlic powder
DIRECTIONS
- Cook the pasta according to the box directions; drain and rinse in cold water.
- Place in large bowl; add the next 6 ingredients.
- In a jar with tight fitting lid, combine the dressing ingredients; shake well.
- Pour over salad and toss to coat.
- Chill until ready to serve.

INGREDIENTS
- 3slicesbacon, fried,drained and crumbled
- 1/4cup thinly slicedgreen onions
- 3tablespoonsvinegar
- 1tablespoonwater
- 2teaspoonssugar
- 1/4teaspoonsalt
- 1 1/2lbsasparagus
- 2mediumtomatoes
DIRECTIONS
- Saute onion in bacon drippings untill tender.
- Add bacon vinegar water sugar and salt Bring to a boil over medium high heat.
- Add asparagus.
- Reduce heat to medium; cover and cook 5 minutes.
- Cut tomatoes into eight wedges.
- Add to skillet and cook, covered for 3 to 5 minutes.

INGREDIENTS
- 1 (300 g)packetspinach, blanched and chopped
- 1smallonion, finely chopped
- 250ml gratedcheddar cheese
- 1 (410 g)canevaporated milk
- 4eggs
- 60mlflour
- 10mlmustard powder
- 7mlsalt
- 5mlpepper
DIRECTIONS
- Preheat oven to 180 °C.
- Grease a 22 cm pie dish.
- Place spinach, onion and cheese into the pie dish.
- Combine remaining ingredients and pour into pie dish.
- Bake for 35 minutes or until set.

INGREDIENTS
- 1/3cupbrown sugar, packed
- 1/2cupdry red wine
- 1/2cupdark raisins
- 1/2teaspooncinnamon
DIRECTIONS
- In a small saucepan heat all ingredients to a boil over medium heat.
- Simmer 5 minutes.
- Spoon over Christmas pudding or fruitcake.
