Mandarin Chicken Bites Recipe

INGREDIENTS

  1. 2boneless skinless chicken breasts
  2. 1 3/4cupschicken broth
  3. 1/4cupsoy sauce
  4. 1tablespoonLea & Perrins Worcestershire Sauce
  5. 1lbfresh spinach leaves, rinsed and stemmed
  6. 8cupsboiling water
  7. 2 (16 ounce)cansmandarin oranges, drained
  8. Dip

  9. 1/4cupmayonnaise
  10. 1/4cupsour cream
  11. 2teaspoonscurry powder
  12. 3tablespoonsapricot preserves

DIRECTIONS

  1. Cut chicken into 1-inch cubes.
  2. In a 10-inch skillet, combine chicken cubes, broth, soy sauce and Worcestershire.
  3. Heat to boiling over medium heat; cover, reduce heat, and simmer until chicken is fork-tender (about 10-15 minutes).
  4. With a slotted spoon, remove chicken from broth and let cool slightly.
  5. Place spinach leaves in a colander.
  6. Pour boiling water over leaves.
  7. Drain and set aside to cool.
  8. Place a cube of chicken at stem end of a spinach leaf and wrap leaf around chicken so that chicken still shows on sides.
  9. Secure end of leaf with a wooden pick.
  10. Refrigerate at least 1 hour.
  11. (Recipe can be prepared up to this point one day ahead.) To serve, place one mandarin orange at the end of each wooden pick.
  12. Serve with Curry Mayonaise Dip (recipe follows).
  13. Curry Mayonaise Dip: Blend all ingredients and refrigerate to allow flavors to mature.

Salami -N- Shells Salad Recipe

INGREDIENTS

  1. 7ounces uncookedpasta shells
  2. 1cup halvedcherry tomatoes
  3. 1cup halvedripe olives
  4. 1 (6 ounce)packagemozzarella cheese, cut into thin strips
  5. 1/2cup choppedgreen peppers
  6. 4green onions, sliced
  7. 4ouncessalami, cut into thin strips
  8. DRESSING

  9. 1/3cupvegetable oil
  10. 3tablespoonscider vinegaror red wine vinegar
  11. 1teaspoonsalt
  12. 1teaspoondried basil
  13. 1teaspoondried oregano
  14. 1/4teaspoongarlic powder

DIRECTIONS

  1. Cook the pasta according to the box directions; drain and rinse in cold water.
  2. Place in large bowl; add the next 6 ingredients.
  3. In a jar with tight fitting lid, combine the dressing ingredients; shake well.
  4. Pour over salad and toss to coat.
  5. Chill until ready to serve.

Asparagus and Tomato Skillet Recipe

INGREDIENTS

  1. 3slicesbacon, fried,drained and crumbled
  2. 1/4cup thinly slicedgreen onions
  3. 3tablespoonsvinegar
  4. 1tablespoonwater
  5. 2teaspoonssugar
  6. 1/4teaspoonsalt
  7. 1 1/2lbsasparagus
  8. 2mediumtomatoes

DIRECTIONS

  1. Saute onion in bacon drippings untill tender.
  2. Add bacon vinegar water sugar and salt Bring to a boil over medium high heat.
  3. Add asparagus.
  4. Reduce heat to medium; cover and cook 5 minutes.
  5. Cut tomatoes into eight wedges.
  6. Add to skillet and cook, covered for 3 to 5 minutes.

Easy Crustless Spinach Savoury Tart Recipe

INGREDIENTS

  1. 1 (300 g)packetspinach, blanched and chopped
  2. 1smallonion, finely chopped
  3. 250ml gratedcheddar cheese
  4. 1 (410 g)canevaporated milk
  5. 4eggs
  6. 60mlflour
  7. 10mlmustard powder
  8. 7mlsalt
  9. 5mlpepper

DIRECTIONS

  1. Preheat oven to 180 °C.
  2. Grease a 22 cm pie dish.
  3. Place spinach, onion and cheese into the pie dish.
  4. Combine remaining ingredients and pour into pie dish.
  5. Bake for 35 minutes or until set.

Raisin-Wine Sauce Recipe

INGREDIENTS

  1. 1/3cupbrown sugar, packed
  2. 1/2cupdry red wine
  3. 1/2cupdark raisins
  4. 1/2teaspooncinnamon

DIRECTIONS

  1. In a small saucepan heat all ingredients to a boil over medium heat.
  2. Simmer 5 minutes.
  3. Spoon over Christmas pudding or fruitcake.
