INGREDIENTS
- 1-2tablespoonoil
- 1lbpork tenderloins, cut into 1/2 in thick strips
- 1-2tablespoontaco seasoning mix
- 1smallonion, sliced
- 1cup fresh ripemangoes, chunks
- 1cupsour cream(light is okay, do not use fat-free)
- 4 freshminced garlic cloves, divided
- 1smallred bell pepper, seeded and sliced
- 4flour tortillas, warmed
- 2teaspoons minced cannedchipotle chiles in adobo
- 1/4cup mincedfresh cilantro
DIRECTIONS
- Toss pork strips in the taco seasoning to coat evenly.
- Heat the oil in a large skillet over medium-high heat; add pork strips, onion, bell pepper, and 3 cloves minced freshgarlic; stir-fry 3-5 minutes.
- Divide the pork mixture and mango chunks into four equal parts.
- Roll up in warmed tortillas.
- Serve with chipotle sour cream.
- For the chipotle sour cream mixture; in a medium bowl combine sour cream, chilpotle chiles, cilantro and 1 minced garlic clove; mix until well blended.
- Cover and refrigerate several hours to blend flavors.
- To warm the tortillas; wrap loosely in a kitchen towel, microwave on HIGH for 30-40 seconds.

INGREDIENTS
- 2 1/4quartscider vinegar
- 22ounceshoney
- 2cups choppedgreen onions
- 3/4cup fresh mincedginger
- 2/3cup asiangarlic and red chile pasteor chili-garlic sauce
- 10ouncessesame oil
DIRECTIONS
- In a large bowl, combine all ingredients except the sesame oil; stir to mix thoroughly.
- Using a wire whisk, slowly drizzle in sesame oil while whisking sauce to combine Sauce can be stored in the refrigerator for up to 2 weeks.
- Serve at room temperature.
- Whisk again before serving to combine ingredients.

INGREDIENTS
- 1/2cup packedbrown sugar
- 1/3cupwater
- 2tablespoonsbutter
- 1teaspooncornstarch
- 1/2teaspooncinnamon
- 3mediumapples, peeled and sliced
DIRECTIONS
- In a saucepan, bring brown sugar, water, butter, cornstarch and cinnamon to a boil; boil until thick (about 2 minutes).
- Stir in apples; cook until tender (about 10-12 minutes).
- Serve wherever syrup, or a sweet topping is wanted.

INGREDIENTS
- 4largebaking potatoes, uncooked and thinly sliced
- 1/4cup gratedparmesan cheese (optional)
- 1/4cupbutter
- 1-2tablespoon gratedonions
- 1/8teaspoongarlic powder (optional)
- 1teaspoonsalt
- 1/2teaspoondried thyme
- pepper
- 1-1 1/2cup gratedcheddar cheese
- 1tablespoon choppedfresh parsley
DIRECTIONS
- Set oven to 425 degrees.
- Butter a 2-qt baking dish.
- In the prepared baking dish, place the sliced potatoes evenly on bottom; sprinkle the Parmesan cheese (if using), over potatoes.
- In the microwave, heat together, the butter, onion and seasonings, until the butter is melted.
- Drizzle over potatoes.
- Bake, covered 45 minutes, or until the potatoes are fork-tender; uncover, sprinkle with grated cheese; bake for about 10-15 minutes, or until the cheese is melted.

INGREDIENTS
- 150gtortilla chips(or more if desired)
- 2 1/2cupsrefried beansor black beans
- 2cups gratedmonterey jack cheese
- 2cups gratedcheddar cheese
- 2jalapeno peppers, finely chopped(or more)
- 1largetomato, finely diced
- 1cup finely choppedcilantro
DIRECTIONS
- Set oven to 375 degrees.
- Grease a 13″ x 9″ baking dish.
- Arrange tortillas in a single layer in prepared baking dish.
- Sprinkle with HALF of each cheeses over the tortillas.
- Sprinkle chiles over cheese.
- Top with dollops of refried beans, then gently spread the beans over the cheese and chiles (reserve any extra beans for another use).
- Sprinkle with HALF of the remaining cheeses.
- Top with tomatoes and cilantro.
- Then top with the remaining cheeses.
- Bake, uncovered for 15-20 minutes, or until cheeses are hot and bubbly.
- Serve immediately.
