Mango Pork Fajitas With Chipotle Sour Cream Recipe

INGREDIENTS

  1. 1-2tablespoonoil
  2. 1lbpork tenderloins, cut into 1/2 in thick strips
  3. 1-2tablespoontaco seasoning mix
  4. 1smallonion, sliced
  5. 1cup fresh ripemangoes, chunks
  6. 1cupsour cream(light is okay, do not use fat-free)
  7. 4 freshminced garlic cloves, divided
  8. 1smallred bell pepper, seeded and sliced
  9. 4flour tortillas, warmed
  10. 2teaspoons minced cannedchipotle chiles in adobo
  11. 1/4cup mincedfresh cilantro

DIRECTIONS

  1. Toss pork strips in the taco seasoning to coat evenly.
  2. Heat the oil in a large skillet over medium-high heat; add pork strips, onion, bell pepper, and 3 cloves minced freshgarlic; stir-fry 3-5 minutes.
  3. Divide the pork mixture and mango chunks into four equal parts.
  4. Roll up in warmed tortillas.
  5. Serve with chipotle sour cream.
  6. For the chipotle sour cream mixture; in a medium bowl combine sour cream, chilpotle chiles, cilantro and 1 minced garlic clove; mix until well blended.
  7. Cover and refrigerate several hours to blend flavors.
  8. To warm the tortillas; wrap loosely in a kitchen towel, microwave on HIGH for 30-40 seconds.

Asian Chili-Garlic Sauce Recipe

INGREDIENTS

  1. 2 1/4quartscider vinegar
  2. 22ounceshoney
  3. 2cups choppedgreen onions
  4. 3/4cup fresh mincedginger
  5. 2/3cup asiangarlic and red chile pasteor chili-garlic sauce
  6. 10ouncessesame oil

DIRECTIONS

  1. In a large bowl, combine all ingredients except the sesame oil; stir to mix thoroughly.
  2. Using a wire whisk, slowly drizzle in sesame oil while whisking sauce to combine Sauce can be stored in the refrigerator for up to 2 weeks.
  3. Serve at room temperature.
  4. Whisk again before serving to combine ingredients.

Apple Cinnamon Syrup Recipe

INGREDIENTS

  1. 1/2cup packedbrown sugar
  2. 1/3cupwater
  3. 2tablespoonsbutter
  4. 1teaspooncornstarch
  5. 1/2teaspooncinnamon
  6. 3mediumapples, peeled and sliced

DIRECTIONS

  1. In a saucepan, bring brown sugar, water, butter, cornstarch and cinnamon to a boil; boil until thick (about 2 minutes).
  2. Stir in apples; cook until tender (about 10-12 minutes).
  3. Serve wherever syrup, or a sweet topping is wanted.

Really Easy and Good Cheesy Potato Bake Recipe

INGREDIENTS

  1. 4largebaking potatoes, uncooked and thinly sliced
  2. 1/4cup gratedparmesan cheese (optional)
  3. 1/4cupbutter
  4. 1-2tablespoon gratedonions
  5. 1/8teaspoongarlic powder (optional)
  6. 1teaspoonsalt
  7. 1/2teaspoondried thyme
  8. pepper
  9. 1-1 1/2cup gratedcheddar cheese
  10. 1tablespoon choppedfresh parsley

DIRECTIONS

  1. Set oven to 425 degrees.
  2. Butter a 2-qt baking dish.
  3. In the prepared baking dish, place the sliced potatoes evenly on bottom; sprinkle the Parmesan cheese (if using), over potatoes.
  4. In the microwave, heat together, the butter, onion and seasonings, until the butter is melted.
  5. Drizzle over potatoes.
  6. Bake, covered 45 minutes, or until the potatoes are fork-tender; uncover, sprinkle with grated cheese; bake for about 10-15 minutes, or until the cheese is melted.

Easy Nachos Deluxe Bake Recipe

INGREDIENTS

  1. 150gtortilla chips(or more if desired)
  2. 2 1/2cupsrefried beansor black beans
  3. 2cups gratedmonterey jack cheese
  4. 2cups gratedcheddar cheese
  5. 2jalapeno peppers, finely chopped(or more)
  6. 1largetomato, finely diced
  7. 1cup finely choppedcilantro

DIRECTIONS

  1. Set oven to 375 degrees.
  2. Grease a 13″ x 9″ baking dish.
  3. Arrange tortillas in a single layer in prepared baking dish.
  4. Sprinkle with HALF of each cheeses over the tortillas.
  5. Sprinkle chiles over cheese.
  6. Top with dollops of refried beans, then gently spread the beans over the cheese and chiles (reserve any extra beans for another use).
  7. Sprinkle with HALF of the remaining cheeses.
  8. Top with tomatoes and cilantro.
  9. Then top with the remaining cheeses.
  10. Bake, uncovered for 15-20 minutes, or until cheeses are hot and bubbly.
  11. Serve immediately.
