INGREDIENTS
- 1/4teaspoonsalt
- 1cupquinoa(rinse throroughly)
- 1/3cup choppedfresh mint
- 1/4cupnonfat vanilla yogurt
- 2tablespoonsorange juice
- 1 1/2cups slicedstrawberries
- 2kiwi fruits, peeled and sliced
- 1 (11 ounce)canmandarin orange sections(drained)
DIRECTIONS
- Bring salt and 2 cups water to boil in medium saucepan and add quinoa.
- Reduce heat, cover, and simmer for about 15 minutes (until quinoa is translucent).
- Puree mint, yogurt, and orange juice in blender.
- Reserve a few strawberry and kiwi slices for garnish.
- In a large serving bowl combine fruit, drizzle with yogurt sauce, and toss to coat.
- Add quinoa, toss gently.
- Garnish with reserved fruit, and refrigerate 1- 2 hours before serving.

INGREDIENTS
- 1 (14 ounce)canlow fatsweetened condensed milk
- 1 1/2cupsflour
- 1/2cupunsweetened cocoa
- 1egg white
- 1teaspoonvanilla extract
- 1cupsemi-sweet chocolate chips
- 3/4cupdried tart cherries(or raisins)
- vegetable oil cooking spray
DIRECTIONS
- Preheat oven to 350.
- In large bowl, combine low fat sweetened condensed milk, flour, cocoa, egg white and vanilla.
- Stir in chocolate chips and cherries.
- Spray baking sheets with cooking spray.
- Drop dough by rounded tablespoonfuls onto baking sheets; bake 6 to 7 minutes.
- Store loosely covered at room temperature.

INGREDIENTS
- 1box uncle bens instantwild rice
- 1 (6 ounce)cantomato sauce
- cut upvegetables(I use an onion, zucchini, yellow squash and mushrooms)
- olive oil
- cheddar cheese or mozzarella cheese, grated
DIRECTIONS
- Saute vegetables in olive oil.
- Stir in tomato sauce-cook until veggies are soft.
- Add box of rice and a little water.
- Cook 5 minutes.
- Add seasoning envelope from box of rice.
- When rice is cooked, put it all in a casserole dish.
- Cover with grated cheese and broil until bubbly.

INGREDIENTS
- 3/4cupslivered almonds
- 1/2cupinstant coffee powder
- 2 2/3cupsflour
- 3/4teaspoonbaking soda
- 1/2teaspoonsalt
- 1cupunsalted butter, room temperature
- 1 1/4cupssugar
- 2eggs
- 1teaspoonvanilla
- 2cupssemi-sweet chocolate chips
DIRECTIONS
- Heat oven to 350.
- Grease two large baking sheets and set aside.
- Spread almonds in a baking pan and bake until golden, about 10 minutes.
- Let cool.
- In a cup, dissolve coffee powder in 2 tablespoons hot water and set aside to cool.
- In a large bowl, combine flour, baking soda and salt.
- With an electric mixer set at medium speed, beat butter and sugar until light and fluffy.
- Beat in cooled coffee, eggs and vanilla.
- Reduce mixer speed to low and beat in flour mixture.
- With a wooden spoon, stir in chocolate chips and almonds.
- Drop batter by heaping teaspoonfuls onto prepared baking sheets 3 inches apart.
- Bake until edges start to brown, about 10-12 minutes.
- Cool on baking sheets for 3 minutes, then remove to wire racks to cool.

INGREDIENTS
- 1largeyellow sweet onion
- 1tablespoonolive oil
- 1/2teaspoonsalt
- 1cupmayonnaise
- 1cuplow-fat sour cream
- 1tablespoongarlic powder
- 1teaspoonblack pepper
- 1teaspooncayenne pepper
- 1tablespoondried parsley
- 1/2cup finely gratedparmesan cheese
DIRECTIONS
- Cut the onions in thin slices and then quarter.
- In a meduim skillet over medium heat carmelize the onions in the olive oil and salt, this may take up to 30 minutes.
- In a medium bowl stir together the mayonaise, sour cream, garlic powder, black pepper, cayenna, parsley, and parmesan, set aside.
- After the onions are done, set them aside to cool.
- After they are cool add them to the mayonaise/sour cream mixture and stir until combine.
- Cover and refrigerate over night before serving.
