Minted Quinoa Fruit Salad Recipe

INGREDIENTS

  1. 1/4teaspoonsalt
  2. 1cupquinoa(rinse throroughly)
  3. 1/3cup choppedfresh mint
  4. 1/4cupnonfat vanilla yogurt
  5. 2tablespoonsorange juice
  6. 1 1/2cups slicedstrawberries
  7. 2kiwi fruits, peeled and sliced
  8. 1 (11 ounce)canmandarin orange sections(drained)

DIRECTIONS

  1. Bring salt and 2 cups water to boil in medium saucepan and add quinoa.
  2. Reduce heat, cover, and simmer for about 15 minutes (until quinoa is translucent).
  3. Puree mint, yogurt, and orange juice in blender.
  4. Reserve a few strawberry and kiwi slices for garnish.
  5. In a large serving bowl combine fruit, drizzle with yogurt sauce, and toss to coat.
  6. Add quinoa, toss gently.
  7. Garnish with reserved fruit, and refrigerate 1- 2 hours before serving.

Chocolate Cherry Chewies Recipe

INGREDIENTS

  1. 1 (14 ounce)canlow fatsweetened condensed milk
  2. 1 1/2cupsflour
  3. 1/2cupunsweetened cocoa
  4. 1egg white
  5. 1teaspoonvanilla extract
  6. 1cupsemi-sweet chocolate chips
  7. 3/4cupdried tart cherries(or raisins)
  8. vegetable oil cooking spray

DIRECTIONS

  1. Preheat oven to 350.
  2. In large bowl, combine low fat sweetened condensed milk, flour, cocoa, egg white and vanilla.
  3. Stir in chocolate chips and cherries.
  4. Spray baking sheets with cooking spray.
  5. Drop dough by rounded tablespoonfuls onto baking sheets; bake 6 to 7 minutes.
  6. Store loosely covered at room temperature.

Vegetable Rice Casserole Recipe

INGREDIENTS

  1. 1box uncle bens instantwild rice
  2. 1 (6 ounce)cantomato sauce
  3. cut upvegetables(I use an onion, zucchini, yellow squash and mushrooms)
  4. olive oil
  5. cheddar cheese or mozzarella cheese, grated

DIRECTIONS

  1. Saute vegetables in olive oil.
  2. Stir in tomato sauce-cook until veggies are soft.
  3. Add box of rice and a little water.
  4. Cook 5 minutes.
  5. Add seasoning envelope from box of rice.
  6. When rice is cooked, put it all in a casserole dish.
  7. Cover with grated cheese and broil until bubbly.

Coffee Lovers Chocolate Chip Cookies Recipe

INGREDIENTS

  1. 3/4cupslivered almonds
  2. 1/2cupinstant coffee powder
  3. 2 2/3cupsflour
  4. 3/4teaspoonbaking soda
  5. 1/2teaspoonsalt
  6. 1cupunsalted butter, room temperature
  7. 1 1/4cupssugar
  8. 2eggs
  9. 1teaspoonvanilla
  10. 2cupssemi-sweet chocolate chips

DIRECTIONS

  1. Heat oven to 350.
  2. Grease two large baking sheets and set aside.
  3. Spread almonds in a baking pan and bake until golden, about 10 minutes.
  4. Let cool.
  5. In a cup, dissolve coffee powder in 2 tablespoons hot water and set aside to cool.
  6. In a large bowl, combine flour, baking soda and salt.
  7. With an electric mixer set at medium speed, beat butter and sugar until light and fluffy.
  8. Beat in cooled coffee, eggs and vanilla.
  9. Reduce mixer speed to low and beat in flour mixture.
  10. With a wooden spoon, stir in chocolate chips and almonds.
  11. Drop batter by heaping teaspoonfuls onto prepared baking sheets 3 inches apart.
  12. Bake until edges start to brown, about 10-12 minutes.
  13. Cool on baking sheets for 3 minutes, then remove to wire racks to cool.

Bangin’ French Onion Dip! Recipe

INGREDIENTS

  1. 1largeyellow sweet onion
  2. 1tablespoonolive oil
  3. 1/2teaspoonsalt
  4. 1cupmayonnaise
  5. 1cuplow-fat sour cream
  6. 1tablespoongarlic powder
  7. 1teaspoonblack pepper
  8. 1teaspooncayenne pepper
  9. 1tablespoondried parsley
  10. 1/2cup finely gratedparmesan cheese

DIRECTIONS

  1. Cut the onions in thin slices and then quarter.
  2. In a meduim skillet over medium heat carmelize the onions in the olive oil and salt, this may take up to 30 minutes.
  3. In a medium bowl stir together the mayonaise, sour cream, garlic powder, black pepper, cayenna, parsley, and parmesan, set aside.
  4. After the onions are done, set them aside to cool.
  5. After they are cool add them to the mayonaise/sour cream mixture and stir until combine.
  6. Cover and refrigerate over night before serving.
