Nell’s Corn Casserole I Recipe

INGREDIENTS

  1. 1egg, beaten
  2. 1tablespooncornstarch
  3. 1 (14 ounce)canevaporated milk
  4. 1/4cup finely choppedonions
  5. 1/2teaspoonsalt
  6. 1/4teaspoonfresh ground black pepper
  7. 2teaspoonsdried parsley flakes
  8. 2 (12 ounce)cans shoe pegwhite cornor thawedfrozen corn
  9. 1cup shreddedsharp cheddar cheese, more to taste
  10. 1/4cupdry breadcrumbs, combined with
  11. 1tablespoon meltedbutter

DIRECTIONS

  1. Combine all ingredients except breadcrumb mixture in baking dish.
  2. Sprinkle breadcrumbs around edge.
  3. Bake at 375 degrees F until heated through, 25-30 minutes.

Spicy Shrimp Recipe

INGREDIENTS

  1. 1/4cupbutter, don’t even think of using anything else
  2. 1 1/2tablespoonsolive oil
  3. 1tablespoonchili sauce
  4. 2tablespoonsWorcestershire sauce
  5. 2teaspoonslemon juice, only the real stuff
  6. 1/2lemon, thinly sliced(with skin)
  7. 6-8clovesgarlic, crushed
  8. 1teaspoon choppedfresh parsley
  9. 1tablespoonred pepper flakes
  10. 1teaspoonoregano
  11. 1tablespoonred pepper sauce, such as tabasco
  12. 1lbjumbo shrimp

DIRECTIONS

  1. Combine all ingredients except shrimp and simmer for 5 minutes.
  2. Allow to cool.
  3. Wash, peel, and devein shrimp.
  4. Dry and marinate 8 hours in prepared mixture.
  5. Preheat oven to 300F.
  6. Place shrimp and marinade in a shallow baking dish and bake 10 to 12 minutes, basting twice, until shrimp is cooked.
  7. Serve in soup bowls with lots of crusty bread to mop up the juices.

Company Green Peas Casserole Recipe

INGREDIENTS

  1. 2 (10 ounce)packagesfrozen peas
  2. 5slicesbacon, diced
  3. 1smallonion, chopped fine
  4. 1cupsliced mushrooms
  5. 2tablespoonsflour
  6. 1cuplight cream

DIRECTIONS

  1. Cook peas according to package directions.
  2. In a skillet, cook bacon until crisp, then remove from pan and drain on paper towels.
  3. Add onion and mushrooms to skillet and saute until almost done.
  4. Add flour, stir and cook for 1 to 2 minutes.
  5. Add cream, cook and stir to consistency of a medium white sauce.
  6. Add all of mixture to peas and stir in bacon.

Spicy Cashew Pork Recipe

INGREDIENTS

  1. 1tablespoonmedium-dry sherry
  2. 2teaspoonscornstarch
  3. 3tablespoonssoy sauce
  4. 2teaspoonssesame oil
  5. 3/4lbboneless pork loin, thinly sliced,then cut into 2 by 1/4 inch strips
  6. 1teaspoonsugar
  7. 3tablespoonspeanut oil
  8. 2teaspoons minced peeledfresh ginger
  9. 2teaspoons mincedgarlic
  10. 1/2teaspoon driedhot red pepper flakes
  11. 1largered bell pepper, cut into 1/4 inch thick strips
  12. 1/2lbsnow peas, trimmed
  13. 1cup saltedroasted cashews

DIRECTIONS

  1. Stir together Sherry, cornstarch, and 1 tblsp soy sauce, then stir in sesame oil.
  2. Add pork, stirring to coat well, and let stand 10 minutes.
  3. Stir together sugar and remaining 2 tblsps soy sauce.
  4. Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately.
  5. Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds.
  6. Add bell pepper and stir-fry 2 minutes.
  7. Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes.
  8. Transfer vegetables to a bowl.
  9. Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds.
  10. Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes.
  11. Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more.
  12. Serve with steamed rice.

INGREDIENTS

  1. 1mediumonion, chopped
  2. 1green bell pepper, seeded and chopped
  3. 1 (4 ounce)cangreen chili peppers, drained (optional)
  4. 1/2cupbutteror margarine
  5. salt & freshly ground black pepper
  6. 2cups drainedcanned cornor thawedfrozen corn
  7. 1cupcream-style corn
  8. 3eggs, beaten
  9. 1packageJiffy cornbread mix
  10. 1cupsour cream
  11. 2cups gratedcheddar cheese

DIRECTIONS

  1. Saute onions and green pepper in butter until softened.
  2. Add chili peppers, if using, season to taste with salt and pepper, and allow to cool.
  3. Fold corn and onion mixture into eggs.
  4. Stir in corn bread mix, sour cream, and grated cheese.
  5. Turn into a 9″ square baking dish, and bake at 375 degrees F for about 40 minutes.
