INGREDIENTS
- 1egg, beaten
- 1tablespooncornstarch
- 1 (14 ounce)canevaporated milk
- 1/4cup finely choppedonions
- 1/2teaspoonsalt
- 1/4teaspoonfresh ground black pepper
- 2teaspoonsdried parsley flakes
- 2 (12 ounce)cans shoe pegwhite cornor thawedfrozen corn
- 1cup shreddedsharp cheddar cheese, more to taste
- 1/4cupdry breadcrumbs, combined with
- 1tablespoon meltedbutter
DIRECTIONS
- Combine all ingredients except breadcrumb mixture in baking dish.
- Sprinkle breadcrumbs around edge.
- Bake at 375 degrees F until heated through, 25-30 minutes.

INGREDIENTS
- 1/4cupbutter, don’t even think of using anything else
- 1 1/2tablespoonsolive oil
- 1tablespoonchili sauce
- 2tablespoonsWorcestershire sauce
- 2teaspoonslemon juice, only the real stuff
- 1/2lemon, thinly sliced(with skin)
- 6-8clovesgarlic, crushed
- 1teaspoon choppedfresh parsley
- 1tablespoonred pepper flakes
- 1teaspoonoregano
- 1tablespoonred pepper sauce, such as tabasco
- 1lbjumbo shrimp
DIRECTIONS
- Combine all ingredients except shrimp and simmer for 5 minutes.
- Allow to cool.
- Wash, peel, and devein shrimp.
- Dry and marinate 8 hours in prepared mixture.
- Preheat oven to 300F.
- Place shrimp and marinade in a shallow baking dish and bake 10 to 12 minutes, basting twice, until shrimp is cooked.
- Serve in soup bowls with lots of crusty bread to mop up the juices.

INGREDIENTS
- 2 (10 ounce)packagesfrozen peas
- 5slicesbacon, diced
- 1smallonion, chopped fine
- 1cupsliced mushrooms
- 2tablespoonsflour
- 1cuplight cream
DIRECTIONS
- Cook peas according to package directions.
- In a skillet, cook bacon until crisp, then remove from pan and drain on paper towels.
- Add onion and mushrooms to skillet and saute until almost done.
- Add flour, stir and cook for 1 to 2 minutes.
- Add cream, cook and stir to consistency of a medium white sauce.
- Add all of mixture to peas and stir in bacon.

INGREDIENTS
- 1tablespoonmedium-dry sherry
- 2teaspoonscornstarch
- 3tablespoonssoy sauce
- 2teaspoonssesame oil
- 3/4lbboneless pork loin, thinly sliced,then cut into 2 by 1/4 inch strips
- 1teaspoonsugar
- 3tablespoonspeanut oil
- 2teaspoons minced peeledfresh ginger
- 2teaspoons mincedgarlic
- 1/2teaspoon driedhot red pepper flakes
- 1largered bell pepper, cut into 1/4 inch thick strips
- 1/2lbsnow peas, trimmed
- 1cup saltedroasted cashews
DIRECTIONS
- Stir together Sherry, cornstarch, and 1 tblsp soy sauce, then stir in sesame oil.
- Add pork, stirring to coat well, and let stand 10 minutes.
- Stir together sugar and remaining 2 tblsps soy sauce.
- Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately.
- Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds.
- Add bell pepper and stir-fry 2 minutes.
- Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes.
- Transfer vegetables to a bowl.
- Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds.
- Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes.
- Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more.
- Serve with steamed rice.

INGREDIENTS
- 1mediumonion, chopped
- 1green bell pepper, seeded and chopped
- 1 (4 ounce)cangreen chili peppers, drained (optional)
- 1/2cupbutteror margarine
- salt & freshly ground black pepper
- 2cups drainedcanned cornor thawedfrozen corn
- 1cupcream-style corn
- 3eggs, beaten
- 1packageJiffy cornbread mix
- 1cupsour cream
- 2cups gratedcheddar cheese
DIRECTIONS
- Saute onions and green pepper in butter until softened.
- Add chili peppers, if using, season to taste with salt and pepper, and allow to cool.
- Fold corn and onion mixture into eggs.
- Stir in corn bread mix, sour cream, and grated cheese.
- Turn into a 9″ square baking dish, and bake at 375 degrees F for about 40 minutes.
