Mellow Pan Roasted Carrots Recipe

INGREDIENTS

  1. 2lbscarrots
  2. 2tablespoonsolive oil
  3. fresh ground black pepper
  4. 1/2cup choppedonions
  5. 1tablespoon choppedfresh thyme leaves
  6. 1tablespoon choppedfresh rosemary leavesor fresh dill
  7. 1orange, cut into wedges

DIRECTIONS

  1. Trim and pare carrots, then cut in 1/2 length wise or cut crosswise in half.
  2. Heat oil on high in large skillet (12 to 13 inch), place carrots closely together in pan in single layer.
  3. Sprinkle with onion; grind pepper over.
  4. Cover and cook medium low heat, turning once halfway through, for 30 minutes or until fork-tender.
  5. Liquid should be evaporated and carrots beginning to caramelize at end of cooking time.
  6. Sprinkle with herbs.
  7. Squeeze three or four wedges of orange over them.
  8. Toss well and serve with remaining orange wedges on the side.

Banana Lemon Sauce For Pancakes Recipe

INGREDIENTS

  1. 1/4cupbutter
  2. 1/2lemon
  3. 1orange
  4. 2teaspoonscinnamon
  5. 3bananas, diced
  6. 1tablespoonhoney, to taste

DIRECTIONS

  1. Grate orange to to produce grated rind.
  2. Squeeze juice from orange and 1/2 lemon.
  3. In small saucepan, melt butter.
  4. Add bananas.
  5. Simmer till bananas are soft.
  6. Add remaining ingredients and serve hot.

Potato Cheese Croquettes Recipe

INGREDIENTS

  1. 2cups coldmashed potatoes
  2. 1egg, beaten
  3. 1cupcheddar cheese, grated
  4. salt
  5. 1/4teaspoonsalt
  6. 1/2cupfine breadcrumbs
  7. 1/2cupmilk

DIRECTIONS

  1. Break up potatoes.
  2. Beat egg in blender until frothy.
  3. Add potato pieces gradually, beating at medium speed until blended.
  4. Stir in cheese and salt.
  5. Shape as desired.
  6. Dip into crumbs, them milk, and again into crumbs.
  7. Fry in shallow hot fat until golden brown on all sides.

Cheesy Spam Puff Recipe

INGREDIENTS

  1. 5sliceswhite bread, torn into small pieces
  2. 1 1/4cupsmilkor half-and-half cream
  3. 3eggs
  4. 1tablespoonspicy mustard
  5. 1/2teaspoongarlic powder
  6. 1/2teaspoonpaprika
  7. 1 (12 ounce)canSpam, cubed
  8. 2cups gratedcheddar cheese, divided
  9. 1/2cup choppedonions
  10. 1/2cup gratedmonterey jack cheese

DIRECTIONS

  1. Set oven to 375 degrees.
  2. Grease a 12″ x 8″ baking pan.
  3. In a large mixing bowl, combine bread, milk, eggs, mustard, garlic powder and paprika.
  4. With electric mixer, beat at medium speed 1 minute, or until smooth.
  5. Stir in Spam, 1 cup cheddar cheese and chopped onion.
  6. Pour into prepared baking dish; bake 25 minutes.
  7. Remove from oven, top with remaining cheese, and Monterey Jack cheese.
  8. Bake for 5 minutes longer, or until cheese is melted.
  9. Let stand for 10 minutes befrore serving.

Tempting Tuna Salad Recipe

INGREDIENTS

  1. 2 (6 1/2 ounce)canstuna, drained and flaked
  2. 1/2cupmayonnaise
  3. 3/4cup thinly slicedcelery
  4. 1hard-boiled egg, chopped
  5. 1tablespoon finely choppedparsley

DIRECTIONS

  1. In medium bowl, combine all ingredients.
  2. Cover and chill about one hour to blend flavors.
  3. Serve on crackers, bread, or a bed of mixed greens.
  4. Optional: You may also add to the above 1/4 cup sliced stuffed Spanish olives and/or 1 tablespoon finely chopped onion.
