INGREDIENTS
- 2lbscarrots
- 2tablespoonsolive oil
- fresh ground black pepper
- 1/2cup choppedonions
- 1tablespoon choppedfresh thyme leaves
- 1tablespoon choppedfresh rosemary leavesor fresh dill
- 1orange, cut into wedges
DIRECTIONS
- Trim and pare carrots, then cut in 1/2 length wise or cut crosswise in half.
- Heat oil on high in large skillet (12 to 13 inch), place carrots closely together in pan in single layer.
- Sprinkle with onion; grind pepper over.
- Cover and cook medium low heat, turning once halfway through, for 30 minutes or until fork-tender.
- Liquid should be evaporated and carrots beginning to caramelize at end of cooking time.
- Sprinkle with herbs.
- Squeeze three or four wedges of orange over them.
- Toss well and serve with remaining orange wedges on the side.

INGREDIENTS
- 1/4cupbutter
- 1/2lemon
- 1orange
- 2teaspoonscinnamon
- 3bananas, diced
- 1tablespoonhoney, to taste
DIRECTIONS
- Grate orange to to produce grated rind.
- Squeeze juice from orange and 1/2 lemon.
- In small saucepan, melt butter.
- Add bananas.
- Simmer till bananas are soft.
- Add remaining ingredients and serve hot.

INGREDIENTS
- 2cups coldmashed potatoes
- 1egg, beaten
- 1cupcheddar cheese, grated
- salt
- 1/4teaspoonsalt
- 1/2cupfine breadcrumbs
- 1/2cupmilk
DIRECTIONS
- Break up potatoes.
- Beat egg in blender until frothy.
- Add potato pieces gradually, beating at medium speed until blended.
- Stir in cheese and salt.
- Shape as desired.
- Dip into crumbs, them milk, and again into crumbs.
- Fry in shallow hot fat until golden brown on all sides.

INGREDIENTS
- 5sliceswhite bread, torn into small pieces
- 1 1/4cupsmilkor half-and-half cream
- 3eggs
- 1tablespoonspicy mustard
- 1/2teaspoongarlic powder
- 1/2teaspoonpaprika
- 1 (12 ounce)canSpam, cubed
- 2cups gratedcheddar cheese, divided
- 1/2cup choppedonions
- 1/2cup gratedmonterey jack cheese
DIRECTIONS
- Set oven to 375 degrees.
- Grease a 12″ x 8″ baking pan.
- In a large mixing bowl, combine bread, milk, eggs, mustard, garlic powder and paprika.
- With electric mixer, beat at medium speed 1 minute, or until smooth.
- Stir in Spam, 1 cup cheddar cheese and chopped onion.
- Pour into prepared baking dish; bake 25 minutes.
- Remove from oven, top with remaining cheese, and Monterey Jack cheese.
- Bake for 5 minutes longer, or until cheese is melted.
- Let stand for 10 minutes befrore serving.

INGREDIENTS
- 2 (6 1/2 ounce)canstuna, drained and flaked
- 1/2cupmayonnaise
- 3/4cup thinly slicedcelery
- 1hard-boiled egg, chopped
- 1tablespoon finely choppedparsley
DIRECTIONS
- In medium bowl, combine all ingredients.
- Cover and chill about one hour to blend flavors.
- Serve on crackers, bread, or a bed of mixed greens.
- Optional: You may also add to the above 1/4 cup sliced stuffed Spanish olives and/or 1 tablespoon finely chopped onion.
